Very healthy Banana Ice Cream - Peel and slice the bananas and open freeze them on a tray (can be bagged to use later). When you want some ice cream put them in a blender or processor and beat the bejesas out of them - expect machine to fight a bit, you might need to scrape down now and then. Drizzle in a bit of cream or evap milk, or milk just enough to moisten and keep it blending (actually Baileys of something like that is lush too!). Keep going until it's lovely and smooth 'ice cream'. Serve immediately, or freeze for later.

I once saw a 'posh cook' do this at a craft show but he put honey and grated pishtachio nuts in and bunged them on a BBQ then passed bits around for folk to taste and it was delish.great idea when you have the BBQ in the summer after you've finished doing the bangers etc0 -
Quick question - I have one black banana. Need to make a cake tomorrow as I have visitors coming, and I wondered if I might be able to make a banana loaf cake with just the one banana (most recipes call for 3) but making up the difference with stewed apple or something else? Any advice from seasoned bakers on making that work? (I can make a cake from a recipe but not very confident striking out on my own!)

I have some bananas past their best, but I don't want to waste them. I don't fancy making banana loaf. Any suggestions? preferably healthy.
