Bananas going a bit black?

    I always eye up the bananas going a bit brown in the bowl and think, banana bread - I MUST try it as everyone here raves about it. Then what happens? before I can make it my OH puts them in the composter! He loves the thought of all that pottasium going into next years crop! Ive tried hiding them - but he always finds them. so can you use bananas that are NOT overripe? maybe I can get to a couple first then?

    you can but the riper a banana is, the sweeter it is - i wouldnt try it as i think the bread needs the sweetness

  • this recipe is amazing,

    baked bananas with chocolate and marshmallows

    4 ripe medium whole bananas
    50g milk chocolate drops

    50g Fiddes Payne mini marshmallows
    1. Preheat the oven to 220°C,425°F, gas mark 7. Using a sharp knife, slice each banana lengthwise through the skin, cutting the flesh but not the bottom layer of skin.
    2. Push some chocolate drops and Fiddes Payne mini marshmallows into the middle of the bananas to stuff them, and then wrap them in foil.
    3. Bake in the oven for 20 minutes or place over medium-hot coals and leave for about 10 minutes until the chocolate is melted and the banana flesh has cooked through.
    4. Serve the bananas whole straight from the foil, accompanied with whipped cream, dusted with cocoa powder if liked.

  • Hi my son has been going through a stage of eating bananas like they were going out of fashion. However, he's decided to put his usual trick of now 'me no like nanas' (he's 2! :)) so now I have about 6 or 7 bananas that are starting to go bad and I really begrudge throwing them away- dont look appealing to eat as they are so any suggestions what I could turn them into?

    Banana icecream? Banana bread? Banana pancakes? :) NEVER thrw away a banana. if you don't have enough for the banana recipe you fancy they freeze very well to cook with. :)

    Banana Jelly - cut them up and set a lemon jelly over them - lovely and may make your little monkey eat them!

  • I really enjoy baked bananas with honey...Slice up two in a small oven proof bowl and drizzle runny honey over them...Leave for about 10-15mins at 175ish (fan oven) and you have yourself a lovely, healthy dessert :)

    Or, you could make a banana face pack?? Banana ice cream sounds yummy.
  • if you do freeze them peel them first and freeze in bags, had a nightmare trying to peel them when defrosting!!
    i do often freeze one if i haven't got enough for a banana cake in one go
