There is a thread on here that mentions freezing them. I'll have a look for you.

    EDIT:
Older thread. Bananas going a bit black.

Loads of ideas there and tips on freezing.

ps I love Banana Muffins. There freeze well when made too and then just defrost as many as you [STRIKE]can eat[/STRIKE] want at a time.

i make a fruit loaf and use old bananas instead of sugar. the kids love it especially with a bit of marg for breakfast. they call it malt loaf.

heres the receipe if you do want to use it

1 mug oats or musli or weetabix
1 mug raisens or other dried fruit or 1/2 raisens and 1/2 mincemeat left over from xmas (that i bought half price last week!!! :P)
    1 mug milk
1 mug mashed bananas with a little bit of sugar
    cinnamon

mix together and leave for an hour

    1 mug s/r flour

mix then put in oven on 180 for an hour (ish). i use a loaf tin and sprinkle the top with brown sugar and takes 1 hr 10 mins. i also sometimes put in choc chips.

lovely fresh out of oven with butter on!! :D

I just freeze them then eat them frozen - taste a bit like banana ice cream. Like ice cream take them out a few minutes before eating. I'm sure I got the idea on here ages ago.

There's a lovely recipe in Nigella Kitchen for banana, coconut and cherry bread. When I made it I didn't have any cherries so I used dried cranberries and it was gorgeous. I'll post the recipe if you like :)
