    Or liquidize the frozen banana (freeze in chunks) with some fresh orange juice and it's like delicious but fat-free ice cream. The less orange juice, the thicker the 'ice cream', so if you put in loads of juice it's more the texture of a McD's milkshake.

    Not up to the above standards, but I just had a banana that had a very brown skin, but the inside was fine, chopped up, mixed with a bit of cinnamon and stuffed into a hot pitta bread. yummmmm
  • Once again I seem to have loads of brown bananas (more black actually!). Last time I made the Sainsbury's Banana & Chocolate Chip cake, it's really simple, is made in the microwave so only takes 7 mins and the kids loved it!

    Haven't tried these yet, but all sound excellent for using up over ripe bananas all found on Sainsburys, Asda, Tesco and Netmums recipe websites:

    Banana bread and butter pudding
    Tropical fruit mince pies
    Carrot cake/loaf
    Banana coconut pudding
    Banana brulee
    Croissant & banana toffee pudding
    Low fat banana bread pudding
    Banana muffins (various versions)
    Banana flapjacks
    Banana & date pudding
    Passion cake sponge puddings (odd name has carrot & not passion fruit!)
    Passion cake
    Fruity oat bars
    Banana bread (various versions)
    Banana loaf (various versions)
    Banana cake
    Banana cupcakes/fairycakes
    Vanilla french toast with brown sugar bananas

    Problem is there's so many to choose from that now I don't know where to start!!

    Here's a steamed fruit pudding I have used as a substitute Xmas pudding for a diabetic:
    1 cup of soft breadcrumbs
    1 cup of mashed ripe banana
    1 cup of mixed druit
    1 teaspoon of mixed spice
    1 teaspoon of bicarb of soda
    1 teaspoon of vanilla essence
    1 egg

    Mix it all together in a bowl. Place the mix in a greased bowl in a steamer with a lid (saucepan with water/lid). Steam for two hours (making sure it doesn't run out of water). Serve

    Ideal for diabetics as there's no sugar in it.

    I'm with the Banana and Chocolate chip cake idea, it's yummy ... in fact I have several bananas sitting on my kitchen work top that I keep "forgetting" to take to work so I shall have to use them up eventually :whistle:

    I have got about 6-8 bananas that have gone from not ripen, to massively over riped!

    Any quick/easy ideas of what i can bake?!

    i use mashed up banana instead of most of the sugar in fruit loaf. banana bread always goes down well in my house as well. or you could take the skin off and freeze them.

    This is a really good recipe I got on Nigella's site:

    100gr mixed dried fruit (I've made this with both vine fruits and chopped dates, prunes and apricots)
    75ml bourbon (made with both bourbon and amaretto, depending on what I had to hand)

    Heat these two gently in a pan and leave to steep for an hour.

    175gr plain flour
    2 tsp baking powder
    1/2 tsp bicarb
    1/2 tsp salt
    125gr butter or marge
    150gr suger
    2 eggs
    4 small bananas mashed (about 300gr)
    60gr chopped walnut
    1 tsp vanilla

    Melt butter and sugar ( I chuck in microwave for 2 mins on "defrost") Beat eggs and add to butter mixture. Add mashed nanas. Add dry ingredients. Mix.

    Bake at 170 degrees Centigrade/Gas Mark 3/325 degrees fahreheit for 1-1 1/4 hours.

    I've added different nuts (like almonds with the Amaretto) and cocoa powder or chopped chocolate to ring the changes.
