Hi Jane,
There are lots of suggestions on this earlier thread that should help:

Someone on here posted a fantastic flapjack recipe that included a mashed banana. It's the only flapjack recipe I've found that works! Sorry, can't remember who it was but I'm sure it's in the recipe section somewhere.0

freeze and peel when partially defrosted to eat as an ice lolly. Dip in melted chocolate and hundreds and thousands if that helps
Or puree with milk/yogurt and freeze in ice lolly mould/small tubs as banana mini-milks.
If you don't have time to make banana cake etc now, freeze as they are and defrost when you have time to bake.

I freeze bananas with skin already removed -children love to eat them frozen (say tastes like banana icecream). Also smoothie recepies often ask for frozen bananas.
I also love banana cake!!0 -
kirstyreanne posted a great recipe for banana muffins on page 11 in the recipe collection thread. Its virtually foolproof and they taste fantastic! Another thing you could try is slicing then freezing them, and then covering them with melted chocolate. Because they are so cold the chocolate sets instantly so you can eat them straight away! :dance:0

I make up a batch of sultana scotch pancakes. Then I mash banana and a little icing sugar into whipped cream, and layer them all up. Yum! Especially nice for breakfast.I like you. I shall kill you last.0
