    You could make a smoothie - either with banana, orange juice and some red fruit (strawberries or rasperries or blackberries) or banana, orange juice, yoghurt plus other fruit if you have it.
    Or that old favourite: Bananas and custard

    I make Banana Custard just by making up the custard as usual, then chopping the bananas into it before cooking so that they get hot and nice and soft - yum.
    I have seen bananas in a fruit crumble recipe but haven't tried it. It's in Sarah Brown's Vegetarian Cookery and she suggests using 175g (6oz) dried apricots, 275 ml (1/2 pint) water or fruit juice and 2 large bananas sliced. You then soak the apricots in the water/juice overnight, then drain and reserve the juice and use as much as you need to cover the apricots and bananas when you put them in the dish. Then cover with the crumble mix and bake as you normally would.

    you could use any type of batter, something thin and light. don't have the recipe to hand or memorised but it's just 1 egg, some flour (if you have something like tempura flour or use a mix of self raising and rice flour) and water or a bit of milk.

    I shallow fry mine in vegetable oil.

    Crispy with ice cream.

    And just remembered something I used to do, chocolate coated banana pieces. Melt dark chocolate, pop banana slices in, freeze 20 minutes. Mix with strawberries, cherries.

    Now I want some pudding. :rotfl:

    Have you used your bananas yet? If not, how about some toffee bananas?

    Make a batter with SR Flour, pinch of baking powder and enough water to make a double cream consistency. Dip banana in and deep fry until golden.

    Meanwhile, put some sugar and splash of water into another pan and melt; DO NOT STIR AT ALL! When it turns a golden toffee colour, remove from heat and give it a swirl in the pan (be careful as it's very hot).

    When bananas are cooked, skewer them one at a time and dip into the toffee mixture, then dip in seasame seeds (optional) and then dip into a bowl of iced water for 2 secs to set the toffee. You need to make sure you coat it completely in the toffee or it will go soggy when you dip into water.

    Serve drowned in golden syrup and vanilla ice cream. :drool:

    I've just had a go at adapting a fig roll recipe , and made banana and chocolate rolls instead ( recipe on my blog if anyones interested, www.amoregreenandsimplelife.blogspot.com) really scrummy:D

    Has anyone got any other ideas for ripe bananas? i normally just make banana cake, but i'm getting a bit fed up with it, could do with a change.

    We have chocolately,toffee bananas now & again, delicious with ice-cream.

    4 Bananas
    1oz softened butter
    1 1/2oz brown sugar
    1 teaspoon golden syrup
    pinch cinnamon

    mix butter,sugar,cinnamon & syrup together. Cut bananas in half & spread the mixture over the flat sides of the half bananas. Press the other halves on top. Wrap up in foil & baked for 15 mins, gas mark 6.

    Choc sauce

    4oz chocolate
    2 tablespoons golden syrup
    1/2oz butter
    2 tablespoons of water

    Just put all the above in a pan & melt over low heat,stirring until smooth. When the toffee bananas are cooked, pour over.:grin:
