Choc mousse using the Saucier (serves 4)
175g good dark chocolate, chopped/broken in bits
125g water
3 eggs, separated
1tbs brandy or raspberry liqueur if liked
3tbs sugar
Put choc bits with the water in the Saucier at setting 5 and let it melt, simmer until it’s a bit thicker but still ‘floppy’ (the original instructions tell you to do this in a saucepan, but you have to watch it like a hawk if you do). Take it off the heat and let it cool for a minute or two.
decant choc into bigger bowl and beat the yolks into the choc mix one by one so they cook and thicken slightly, beat in the alcohol if using.
Stiffly beat egg whites in a clean bowl, add the sugar and keep beating until the whites are glossy – about 30 seconds. Fold the egg whites into the warm choc mix. Pour into ramekins and chill for at least 2 hours.
The original recipe also had 250g raspberries, and you half fill the ramekins with mousse mix, than a layer of raspbs, then rest of chocolate. Then you decorate with whipped cream into which you’ve put a bit of raspberry liqueur and some sugar, and scatter a few raspberries over. I never do the raspberries bit, but suppose I might if I got to the PYO at the right time.
But the choc mousse is fab anyway.

I've been a bit disappointed with the Stay-fresh bags too, especially for carrots and celery. I've left the latest batch of carrots in the bag they came in, and they are pretty much okay a week later! And I now wrap celery tightly in foil as suggested by JackieO on another thread, and it keeps much better.
We bought a banana bag a couple of weeks ago and are very pleased with it - takes up a lot of space in the fridge though!:p0 -

Lock and lock are sold in most good kitchen shops. We have one called 'Kitchens' near us which sells a bigger range than Lakeland.
The Range does a similar brand which is of similar quality to Lock n Lock.0 -

Waitrose sell the lock and lock containers but only a limited selection. I got a similar pack from M&S for £5 which had 1 container with 2 removable sections, 1 larger container and one huge one. This one:

kazd I hunted the shopping village looking for the lakeland but it's down the road ! Look on Lakeland's website for directions - it's v easy to park and a horribly seductive shop, based in the Huge garden centre which they recently revamped. Off the dual carriageway going from Bicester town towards the M 40 and Oxford.
I have to stop myself going there now........0
