    I know veg boxes aren't too OS but I do like them and now have a nice full fridge - but need inspiration.

    Can you give me some recipes that use these -
    fennel
    black kale
    red cabbage
    pak choi
    cauliflower

    Also got spuds, onions, carrots, leeks.


    I am going weightwatchers so cant use cheese or cream or bread tooo much!

    What sort of things shall I do with these then ?

    Don't know who does your box, but there are dozens of recipes on the riverford website http://www.riverford.co.uk/recipes/index.php?
    You can also search recipes by ingredient on the BBC site.

    I had my first veg box this week, but cunningly chose a box with familiar items!

    Thanks Pink, am sitting here trying to catch up on some work that I didnt get done this week, whilst babysitting for a friend, and tryong really hard to not just surf .... will check out those links in a bit ....

    Thanks also Addiscomber, it is a Riverford box actually, and I have used their recipes but sometime they are a bit posh and my kids wont eat them. Just windered if anyone had some real life ones lol

    Will check out their recipe archive again though

  • Fennel is lovely roasted in the oven with just a little olive oil and some coarse salt. I sometimes roast it with red peppers, onions and new potatoes and it is fab! Red cabbage is nice braised in the oven with a couple of chopped apples, a diced red onion, a tbs of sugar, 2 tbs wine or cider vinegar, salt and pepper and a pinch of nutmeg and cinnamon. you just braise it in a little water mixed with the vinegar and spices in a covered casserole for about 2 hours. With the cauliflower you can make lovely cauliflower cheese by cooking the cauliflower until it is tender, and then covering it with cheese sauce (1 pint milk, 4tbs flour, pinch mustard powder, salt and pepper and 3oz cheese) - if you're on WW you can just grate the cheese directly on the cauliflower and grill it - that's nice too.

  • I've been using a local organic farm (Belfield organics) which provides a box scheem at a very good price small box £10 free delivery and they deliver in Glasgow, Edinbough and Dundee areas that I know of.

    The websites a bit basic but they're friendly over the phone. The main down side is that you have to call during the day (9-5) to get hold of anyone. But the fruit and veg is always of top quality and they give recipy sugestions with each delivery that aplies to what they have given you that week.

    Also it's all localy produced stuff and if they provide anything that is imported they let you know.

    I have finally found a local supplier for the organic veg boxes (they also do organic meat). Think I am gonna try it for a month and see how it goes. Do you get enough veggies to last the week? Dont mind paying extra but would like to think I wont have to go out after 2 days buying more stuff.

    It's just try it and see with regards to quantities. If there aren't enough, you may need to go up to a bigger box, or order an extra bag of spuds or something.

    With the Co that I use they say on the internet what is in this week's box, and you can order extra's if you want.

    I alos use this company and they have been very good when i have had to change my order at he last minute, I don't get potatoes as we grow our own and they have been very good at adding in extra veg and I think that we have tried more new veg in the last year than the previous two.

    The also attend a lot of the farmers markets in central scotland.

    Well took delivery of my first box today, did a mixed box of veg and fruit for £11.50.

    I got

    4 apples
    3 Bananas

    half a dozen spuds (1 big, 3 med, 2 diddlers)
    8 carrots
    2 parsnips
    1 head of brocolli
    1 Fennel
    4 onions (again big to pickle onion size)
    1 bag of some green stuff (kale looking?)
    1 squash (not sure what type, round like a pumpkin but more yellow??)
    1 lettuce

    Cannot say I am overly impressed with the quantity, I will definatley need to buy more from the greengrocers.

    Guess it will be soup with the squash. Fennel??? Never had that any ideas?

    Oh well was worth a try, see if I can get DH to drive me to the farm shop before I start work on Saturday mornings, see if that is any better.
