This is the second week that I have a small box from Riverford. Last week out of interest I weighed the contents, the quality of which is extremely impressive.
cosmos potatoes 1050g not a variety I am familiar with, quite tasty
carrots 780g absolutely delicious - actually have a taste
onions 545g not tried yet, look good and are firm
leeks 510g very tasty, nice and firm
cauliflower 640g good
cabbage 1230g even my DH enjoyed this shredded and steamed
curly kale 300g enough for DH and me 3 times wih other veg
mushrooms (which I did weigh but must have got distracted by my son, who has forbidden me to bring mushrooms into the house:mad: Anyway I had a good helping on toast for lunch twice)
I have had a salad box both weeks as well, but will give that a miss next week as, despite getting more salad into my boys probably then in their entire lives hitherto, we are not keeping up with it. It is lovely stuff though - the celery is crisper than I get from the greengrocer and the leafy stuff is really fresh. The cherry tomatoes that I was expecting were replaced by 4 large plum tomatoes which were glossy and beautiful to look at - a shame to have to put the knife in0 -
Maybe its been done already today, but I got a veg box today for the first time in months, and need some inspiration please! Here's what I got:

I had a similar one today aswell. I was looking for inspiration too!
I have the same plus brocoli, parsnips, a squash and purple tinged cabbage.
Have you had a look at the Riverford website there is usually recipes to go with whats in your box, only tried one recipe when I had a marrow, but it was lovely and not something I would have considered trying normally.0 -

Received my first ever fruit and veg box today
So excited, but have no idea what to do with them :eek:
We do like our veggies but are very boring, have the same old thing ie broc n cauli with our roast etc. etc. Want to try some new things and encourage the kids to eat more veggies so decided to get the box....this is where I need your help!
This is what is in my box, can anyone give me some pointers on what's the best thing to use them for, we do eat meat btw:

The mega recipe thread has some brilliant ideas for using the aubergine and the courgettes. Personally, if I get either of these I'm off away to the kitchen to run up a mousakka. The boys love it, which shocked me. They're fussy ole eaters.
I use either of those two veg to layer into a mousakka and they taste so fresh and beautiful. I sometimes think that if you are lucky enough to have good quality veg like you have, its worth just cooking them simply and really enjoying their natural flavour. Definitely in the case of runner beans. Might go the mousakka route myself today as I've finally managed to grow my own courgettes. Glad you got your box safely and sounds like some nice bits to cook with!
I now have an addiction to peach/nectarine compote which I make every week and have for lunch with natural yoghurt and crunchy muesli and bananas warmed with a little bit of brown sugar and butter with a scoop of vanilla ice cream or banana custard!
As for the veg ratatouille screams out or the courgette bake I found yesterday. You can also make a gratin with aubergine and potaotes which is gorgeous. One tip is though people will say you dont need to do this anymore my abel and cole aubergines have been a hundred times better with this method. You cut into thick slices, sprinkle with salk and leave for half an hour. Wash and pat dry afterwards, they taste so much nicer and have a better texture too.
The runner beans I normally cut each side off and the tips as the edges can be stringy. Then just cut diagnolly into 1/2 cm strips - lovely with roast. You can also add to salads but ive never tried that. You could add to most things to be honest as really not a strong flavour.
Ive made some lovely things lately. Courgette with bacon and onion in an omelette is gorgeous, aubergine with bacon and tomato sauce for pasta. You can always just have roasted veg which goes with anything imo.
