Dear all,
I've got over 2 kilos of onions left from organic box deliveries. I use them as often as I can, but I can't seem to make a dent in my hoard of onions.
Can anyone recommend recipes for which you use lots of onions? I thought of onion soup myself, but I need to look up a recipe.

Cheese and onion omlette? Fry off loads of onions in a frying pan, add beaten egg, cook until firm and top with grated cheese and put it under the grill till the cheese bubbles.0 -
There's a very nice basic curry sauce by Curry_Queen in our Recipe Collection which uses a kilo at a time.

Try making cream of onion soup.
Use about 4 onions diced, saute in oil/butter/marg until softened
Add 11/2 pint veg stock (or chicken/ham stock)
Salt and pepper
Herbs dried or fresh of your choice (thyme, parsley, basil, oregano-anything that you have) Approx 1/2 tsp dried or 1-2 tblsps fresh.
Simmer for about 20 mins or so. Liquidise at this stage if required. Also can be frozen at this point when cooled.
Then either add cream, or some kind of substitute, or mix of cream and milk - amount really is a matter of taste. Reheat gently.
OR, make up white sauce - 1oz marg, 1 oz flour, 1/2 pint milk - melt butter, add flour, cook through for one min stirring, add milk gradually, stirring all the time, until boiling point reached, lower heat and simmer for couple of mins. (Or do in microwave)
Whisk white sauce into soup and reheat for a few mins.0 -

i'd definitely recommend the curry sauce! It's great and following the recipes you can make a curry that tastes like you have just bought it from your local indian takeaway0 -
Onion sauce - see Anne_Marie's recipe - is great over cauliflower and broccoli.

We call this 'Potato & Onion Stuff' but I'm sure it has a real name.
Slice about 1 1/2lbs of both potatoes and onions and put in a casserole dish with a couple of knobs of marg/butter.
Cover and cook in the oven for about an hour on a medium heat (gas 6ish)
When cooked, cover with grated cheese and brown under the grill.

Not sure if it's in the index, but basically just a pastry case of some sort - your choice, filo, puff etc. Fry off some onions in some sugar to start to caramalised, add some salt and pepper to taste. Fill the case, and wack in the oven to finish off. Add some goats cheese towards the end so it melts in.
