Loads of onions

I recently brought home loads of onions from our community allotment and knew they wouldn't get used very quickly.
I chopped them all up in my food processor and then froze them spread on a baking tray - once frozen, I then put them into freezer bags, then when you need some you just give the bag a bash to loosen them all up again then take what you need and put the rest back - they will keep for ages like this.

I read that you can keep them for 2 months? I bought a 2k bag yesterday as i plan on using them in my slow cooker but i didnt know you can freeze them chopped
. Apart from making casseroles, soups and curries i will use them in pasta and cold savoury rice dishes too.

Hi mandy_moo_1,
As thriftlady has said onions will keep for ages and if you feel you have too many they can be easily frozen. These threads may help:
Freezing onions
Onions - when to use by?
There's an earlier thread with lots of suggestions for using onions so I'll add your thread to it to keep the ideas and recipes together.

What about some onion marmalade? Slice the onion really finely (sounds like you only need one onion but I would use 5-6 normal ones), melt about two ounces of butter in a pan, add an ounce of sugar, fry onions really gently until they are going nice and gooey-caramalised, add a quarter pint of sherry/marsala/white wine and continue to simmer really gently until almost all the liquid's gone. This keeps in a jar in the fridge for at least a month and is really nice with cheese, pate & cold meats, sausages, added to stews & risottos...
It does need to be kept in the fridge though as the mixture hasn't been heated to sterilising point so it can't be kept in jars like orange marmalade.Debt at LBM (20th March 2008) £13,607

Hi Lovelies
I'm a woman on a mission to sort out my family of three, sometimes wasteful, sometimes forgetful and always unorganised people. We're on a mission to become debt free by the end of next year, so no more starting on a Monday, It starts today and it starts with a sack of onions!!!!:rotfl:
I have close to a full 5kg bag of onions that need to be used so was thinking maybe of cooking and freezing some (are they ok to freeze/freeze well?)
Was thinking possibly some onion soup? I'm currently doing slimming world so needs to be healthy?
Is there anything else I can do with my onions? Debated trying to stitch the skins together to make my son a jumper, but didn't think it would go down too well!
Thankies x0 -

They'll freeze great! Chop and fry/roast them (you don't need too much oil, though they are nicer like that) and freeze them in small portions so you have them ready to throw straight into quick meals
Onion soup would be nice too!
I'm envious, I want 5kg of onions!0 -
Last time I had a glut of onions, I sliced them & open froze them on a baking & them put them in plastic bags , this way I was able to just get a few slices at a time.
I don't think I fancy a jumper of onion skins, lol, but you can use the skins to dye fabric.

The sticky onion gravy on the BBC Good Food website not only tastes delicious but uses up lots of onions. Oh, maybe not diet friendly though!0
