We like onions, so it was a no-brainer when we saw a 10kg bag of very large onions. It was only £5 so we decided to buy it . . . and then we discovered it was bogof!!!!
What on earth do I do with 20kg of onions (before they go off)?
The freezer is stuffed full and we've had onions with everything all week, and I've not even used half a sack!! Tonight we'll have onion tart (like a quiche but more onion than eggy stuff).
Can anyone point me in the direction of recipes that use a lot of onions . . . pleeeese!0 -
Curry!
I bought the book Indian Takeaway secrets and you need at least 4-5 onions to make a base curry sauce for one curry, which you can freeze and then add meat of choice.
A bag of onions usually lasts me several weeks although a bag I have currently is sprouting as I type. Better growing than rotting, I say.
Why not bury a few in the garden and see what happens?TL0 -
As I see it your problem isn't using them up before they go off but being able to store them properly. Normally they are harvested, stored over winter and used all through the year until the next harvest, so should keep for months and months if kept in the dark and dry.
Otherwise, try making a vast batch of onion chutney/relish. Dead easy and very satisfying indeed. It's lovely to see all those jars lined up on a shelf waiting to be either used or given away as gifts.0 -
French onion soup :-)Can't think of anything smart to put here...0

You could dry a few of them out and make onion powder. Its quite a useful ingredient and difficult to get hold of in the supermarket.
Should keep for a couple of years in a spice jar.Borrowed - £148000 June 2013
Original MF Date - May 2038
Aiming For - March 2031 (At Latest!)
Overpaid - £490.00

Look, since you got one bag free why not offer all your neighbours 2kg of onions for free and give away the second bag? Who knows, when someone spots a load of spuds going cheap you may end up with a kilo from one of them?0

slice them, slow cook them in butter until the naturally brown (thats brown, not take colour from the pan)
cool, back in small batches and freeze
can be used in many dishes or as toppings for burgers, pizzas etc0 -
They should keep for quite a while, I grew onions for the first time last year and they stored well for many many months.
I strung mine up in old tights, with a knot between each onion, which kept them separate and so if one started to spoil the others weren't affected.
Enjoy your bargain!0 -
Excellent storage-advice there, Tiree. Apart from storage one could choose to chop and freeze them for any recipe that needs them as well as browning them off then freezing. To my mind too many onions is not a problem, too few are.
Do you have a shed or other outside structure that's cool and dry to hang them in? I've got a five-kilo bag just sitting in a kitchen cupboard. They've been in there a while and nothing bad has happened to them yet.0 -

That's a good idea.
I made some onion marmalade. It's nice, but very sweet. Chutney sounds much better. I'll definitely use up some of the onions for that! Thanks.0
