OUT liver yesterday, today turkey thigh for weekend, not sure what to eat today and tomorrow
Do I need it or just want it.
  • Pack of casserole veg, now turned into soup, some freezer honey parsnips turned into soup and I have a 20p pkt of parsnips and carrots to make soups later in the week, some for freezer. Had a portion hake from freezer for dinner last night and am having 2 faggots tonight. While oven on am making an orange cake to take to dd tomorrow as I have been invited for Easter lamb dinner, may make an Easter rocky road bar (from Asda em today) as s-in-l is chocoholic, and have taken 2 pkts sausages out to cook in oven whilst it is on, will then parcel in x 2's and return some to freezer, I can then get out a portion when wanted. Some-one on here said to portion frozen chips into portions, I did that and ditto with the parsnips, so much easier to grab and go so thank you x do not know why I had not thought of that when I do with sausages !!

I did a vegan Christmas, so have little bit of this and lots of that left over. Bought a big tub of Hummus a few days ago as part of my new healthier drive (my blender blew up, see vegan christmas above), not realising can't freeze it. so, adapting a recipe found online, done a very yummy gluten free loaf with leftover gram flour, hummus, peanut butter instead of tahini and chopped pecans instead of sunflower seeds.

Tonight will be stirfrying a leftover bag of lettuce to top with fish from freezer got on easter specials
Fact: i am a carnivore, but i love my friends, so cook what they can eat ;)

I am vegan and regularly buy the hummus from Lidl when it is marked down to 20p a tub. In fact I got a caramelised onion one out and had it for lunch today with toast. Sometimes it needs a bit of a stir, but ignore the do not freeze bit, believe me!

I make hummus with cauliflower, I eat low carb, and find it freezes excellently.

OUT Sausages Thursday, Salmon yesterday, Lamb mince today, fakeaway doner, Pork tenderloin for tomorrow.
IN will be 2 packs of donated by a neighbour Aldi sausages, she spotted them half price, collect later.
I feel like I am taking 2 steps forward and 1 back all the time, but at least I am gaining some space.

  • Last night used a portion of carrot souffle (last portion gone to freezer) and a fish from freezer, mixed it up into a sort of pie, was nicer than the carrot souffle on its own. Put little pots of too thick carrot & ginger soup into freezer to use in stews etc as and when. Taken 2 x marg tubs of left overs out for lunch and dinner and a few more slices of HM multi grain bread out for toast etc next few days. It is surprising what sort of foods we eat - especially meals for one - to use up freezer stuff. Planted 3 chitting potatoes in tub to see if I will get more later in year.
