Just feel disgusted with myself after working out how much I have spent on food so far this year. It's no wonder the freezers etc are bulging.

I've given myself a serious talking to and have sent my daughter out with a list of 'needs'. Just five items on the list, no more shopping until next weekend.

I'm continuing to try and create space in the freezers by boiling up all the turkey carcasses, making stock and taking off the meat for pies etc. I started with 27 carcasses and I've done about half. (I raise my own turkeys - but do sell some locally to the village and friends - some people (fortunately not all) want them de-boning or just crowns - that's why I have so many carcasses and because I hate waste I try and use them)

Help - I need a good fail-proof tasty recipe for turkey pate, any ideas? - a chicken recipe would work just as well.

I've not made turkey pate but have made a terrine with LO Christmas turkey & ham a good few times which is pretty decent, this is pretty much how I make it though I don't use tarragon just parsley and mix in a couple of tablespoons of chopped gherkins :)https://www.telegraph.co.uk/foodanddrink/recipes/6867148/Boxing-Day-recipe-Parsley-turkey-and-ham-terrine.html

    Today
In: smoked sausage & bean stew
Out: chicken thigh, gammon joint, round steak, mini corn cob
    Used up: corned beef
Ditched: 3 rashers OOD and rather iffy looking streaky bacon:o

ETA - forgot about this as I made it with chicken and it was really good https://thehappyfoodie.co.uk/recipes/turkey-pate
  • Out:
    1) frozen chicken breast, various vegetables hanging out in my fridge, frozen homemade chicken broth, spices, the navy bean I cooked yesterday, Parmesan rind and a can of diced tomatoes = minestrone. So tasty.
    2) posole from the freezer with oyster crackers and minced onion. Terrible hangover (first in 15-20 yrs) that was helped tremendously by the hot chile in this delicious Mexican stew.
Overprepare, then go with the flow.

Thanks Caronc :- Love the look of the terrine and I'm ashamed to say I have all of the ingredients for both recipes. I'm going to try the terrine this afternoon.

Nowt to be ashamed of - apart from the single cream (though I have double frozen:rotfl:) so do I:cool:. Enjoy the terrine:)
    In: nothing
    Out: cupasoup
Used up: lettuce, mushrooms, double gloucester
  • Out: tea bags, eggs, pickled jalapeño slices
    Canned chili for hotdogs
Took grilled chicken off the bone and froze it. Same with grilled steak.

Threw out the last piece of cake. It went off.
Overprepare, then go with the flow.

    Groceries delivered today.
In: spaghetti, red lentils, tinned corn, tomatoes, chick peas & butter beans; frozen spinach, portion braised steak & onions
    Out: dried peas, singapore noodles
Used up: 2 bashed eggs that got knocked as the guy was bringing the shopping in
  • OUT: Brie from Christmas, leftover minestrone
I dipped the wedge in a beaten egg with a touch of cream (out of milk, so I used cream) and then in seasoned panko and saut!ed both sides until golden in a mix of olive oil and butter. Sprinkled chopped chives on top and served with buttered garlic toast.
Overprepare, then go with the flow.
