    It should be fine as long as it's been well wrapped. You might find some of the skin has freezer burn on it. If it was bought frozen and never been unwrapped it should be fine. If you are unsure why not defrost it and cook and if it's fine refreeze until Christmas and just defrost & reheat when needed. That way if your not happy with it you've got time to sort something else out.

    I have a frozen goose crown - purchased last year....am thinking of using it for this year, actually on Christmas Day this time. But am concerned that it might not have stood the test of time!

    I have read on a .gov website by the food safety govt organization that frozen food is in fact safe to eat after its recommended use-by date, but that what does happen is that the texture can change once it is left in the freezer.

    I'm no expert but I think the 'texture change' is more likely to be drying out or freezer burn type of thing. Does it look OK? I've had old meat that looks pale and stringy and obviously dry (and I've used it in a stew and it was fine).

    On the other hand, I've also had venison steaks in the freezer for 5 years (yep! really!) and they've defrosted and seemed as fresh as when they were first frozen.

    So I would take a look and see if it still looks 'juicy' with no discoloured bits. If that's the case, it's probably fine.

    Maybe someone else knows better than me?

    Over the last week it's been a bit busy, so here's my catch-up.....

    Out (freezer): 2 small chorizo, 4 chicken thighs, mashed swede, liver and onions (leftovers from a while back), and 2 individual pies.

    In (freezer/fridge): Um...cooked beefburgers, 2 haggis meals (for mum with dementia - they're only temporarily in there). 8 cauliflowers (see below)

    Used up: Made a huge tray of roasted vegetables to use up dregs in the fridge (didn't have the cauliflowers at that time).

    However, I still need to use up 7 cauliflowers. I bought a tray of 8 at Bookers (YS) for £2.00. Made mashed cauliflower as a change from mashed potato. Was going to pickle the rest but they're really too far gone. So I guess it's soup, or cauliflower cheese. I'll have to eat it with the beefburgers. .. . . .
  • I’m slowly getting closer to a defrost date :) .

    This week
    Out – sweet & sour pork, roast veg pizza topping. A haddock fillet, broth, 4 slices bread, 250g lamb mince.

    At the moment what I’ve got left to work with =
    RTH Portions
    Chicken = Lasagne x 1, Curry x 1, In Oyster Sauce x 1
    Pork = Sausage & Bean Chilli x 2
    Beef = Stew x 2, Keema Curry x 1
    Veggie = Pakora x 4

    Soup Portions = Broth x 2, Pea & Ham x 2, Minestrone x 2, Celery x 1, Leek & Potato x 2

    Uncooked Meat/Fish =
    Chicken Breast x 1, Turkey Steak x 1, Bratwurst x 3
    Corned Beef x ½ tin, Streaky Bacon rashers x 3, Square Sausage x 4, Black Pudding slices x 3. Raw King Prawns x ½pkt, Cooked Prawns x ½ pkt, Scampi x 1pkt.

    I also have some veg that needs using up so I'm thinking soup will be made tomorrow, probably a lentil/veg mix therefore an increase of soup portions, but no waste :D

    No last local weekend food purchases or "Black Friday" offers were acquired. However, my online grocery order will be delivered tomorrow.

    It's looking doubtful that my aim to reduce freezer contents (i.e. less than 90% full of the one remaining drawer) will be achieved. Some perishables and soup portions have been recently frozen.

    Thanks Caronc, I’ve been putting off buying anything for the festive period until I had enough room to store it; I’m aiming to stock up on fish/seafood, meat and artisan bread at a farmers market in about 3 weeks’ time.

    In – 4 portions lentil soup, 1 portion lamb kofta.
    Out for today - handful of peeled prawns, half an avocado, chicken & mushroom lasagne.
    Used up – lettuce, radish, spring onions, carrots.

    Popped to Aldi for some stewing meat, got a pack 400g, and an half price huge chicken, popped it right into instant pot when I got home.
    IN 2 ready cooked large chicken breasts, 1 bag dark bits for curry, 2 packs of stewing meat.
    Rest of chicken fed me and the dog yesterday.
    Do I need it or just want it.
