That's for today and yesterday! Two days out has really scuppered my plans for using stuff up!
Tomorrow I'll be making a picnic for four, but we'll be having fish and chips on the sea front for dinner - yummy!

Out:- 3 lamb chops, portion cooked turkey, 2 slices bread, leeks, shortcrust pastry
Used up:- 3 apples, blackberries, sm salmon, beans, eggs.0 -
I always keep a running supply of fruit, veg & salad stuff, but really have gone overboard on the peppers. They were 20 for £1 and I have a load in the fridge. Does anyone know if they would roast in2 sweet peppers, they are the yellow long ones. I do use them in stews, curries & salads. Also any ideas what to do with some aubergine - I really have not had much success.
I regularly use peppers as a substitute for pasta - so cut them in half length ways and remove the pith and seeds then fill them with whatever sauce everyone else is having, topped with grated cheese and then 30 minutes in the oven.
I also chop them into 2cm chunks and freeze them when I have bought too many.
Re aubergines I use them chopped and fried, along with (no irony) peppers, onions and tomatoes - like a poor man's ratatouille, without courgettes and seasoning - the trick is to sprinkle the chopped aubergine with salt and let it stand for ten minutes, then rinse and dry before frying - it prevents them sucking up all the fat, along with very hot fat to cook them in.
The classics are sliced (salted and fried) and then baked in a rich tomato sauce (melanzane parmiggiana) but this classically has grated cheese on top - I guess you could use a parmesan substitute mixed with breadcrumbs (I am assuming you do not eat regular cheese) or as moussaka but I think you are vegetarian, if not vegan so no lamb or cheese and egg sauce for you with the latter.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Didn't go out today so avoided acquiring any potential food purchases adding to what I currently have.
Sorted out a "glut" of boiled onions by baking them using some end of jar coconut oil. A big tub of (free) rendered fat is now nearly finished and was used for making wild birds food. Also, used the liquid leftover from making vinegar cheese for bread making. So things are being used up but still a long way to go!
No (food) spend days = 10/12.0 -

OUT:- piece pork, tomatoes turned into soup, ice cream
Used up:- from fridge and cupboards. vegetables, fruit, jelly, chocolate

Thank you very much Suffolk Lass I will try salting the aubergines, I'm determined to come up with something edible. I think freezing peppers would be good too, as I add them in2 stews curries, etc, do you blanch them. I did roast a load - OMG they were lovely, added a bit of oil and put them in a closed container, supposedly they are supposed to last a week or two. I don't eat dairy cheese, but there are a ton of substitutes around.
No INS, lots of OUTS - mainly salad stuff/veggies, soups , a cob loaf. Day 3 of no (grocery) spends. Don't really need anything. Will go Thursday, if I can mentally last that long. EDIT - in fact need plant milk, unless I make some oat milk.0 -
Felt I needed a bit of exercise (bicycle) so I went to the local shops. Checked for actual/potential food "clearance" items but still not what I want to pay/not happening yet. Anyway, current food stores are therefore being used up.
No (food) spend days = 11/13.0 -
I was staying with friends yesterday so nothing in or out.
