  • Took 4 Londoner sausages from the freezer, had 1 in a roll for lunch, will make the rest into meatballs, make a tomato sauce and use some spaghetti i got free.

    Going to put some blue cheese in the freezer, im not ready to use it just yet, yesterday some pork buns came out.

    Back on board with the cooking and cupboard/freezer content using...

    Breakfast - yoghurt/granola/OJ

    Lunch - attempted a hm salad:
    Used pearl barley, quinoa, puy lentils and bulgar wheat, cooked up together for 20 mins ish.
    Made dressing from white wine vinegar, agave, lemon juice, mustard, salt/pepper, pomegranate juice.
    Added in fresh HG chilli/sweet pepper (remnants from greenhouse), shop bought cucumber and veg box pomegranate seeds.
    Had some HM courgette fritters from the freezer and a shop bought pitta bread and topped the salad with organic feta as it has been bought for me ages ago and been meaning to use it in something. Think I should have divided it into 4 not 3 though as was bit too much.

    Thought it was going to be a disaster but it tasted really good and went so well with the courgette fritters. Forgot to add the giant couscous and could have done with some fresh herbs and maybe some roasted veg and might cook up some haricot to go in too next time. Will make more of this in the next couple of days as need to use the feta up now it's open plus I have the other half of pomegranate and lemon to use.

    Dinner - not sure yet, may go to gym and if so will decide when I get back.

    OUT freezer
    Kipper fillets in butter (only £1 per box fom Iceland - Young's Scottish kippers) had them for lunch with swede and leek mash - not as good as fennel and celeriac mash but I have the football size from Hell swede which just doesn't seem to be diminishing much :(

    Kirri mmm like the look of the courgette fritters. I gave most of my veggie cookbooks to my mother and may have to reclaim some for inspiration and experiment ;)

    ^ I think I got the recipe for those from the Frugal Feeding blog but the batter mix needed amending a bit iirc.

    I think I still have Not Just A Load Of Lentils, one of Gail Duff's veggie cookbooks and the Cranks one and that's about it. I had loads before.. really out of practice at veggie.

    Nipping round to Tesco Express in a mo to see whether it has any veggie burgers. If additive free will stash some in freezer until I get a chance to get cracking on veggie cooking.

    HFW's River Cottage veg is probably my fave veg cookbook at the moment.

    Nigel Slater is back on TV Wed night I think it was, teaming up with Adam from the farm on Countryfile. Should be good even if a bit meaty for me..


    Dinner - quick snack as came in hungry - last pitta bread and fresh cashew butter - I can't get enough of this, going to buy more this week.

    Got about a week's worth of fresh HG veg left and I will have to start buying it again... my food bill will now go up quite a lot. I do have some frozen stuff to use but will mix and match with fresh as I find it a bit bland in comparison.

    There's a good recipe for swede mash on the Veg Box Recipes site, has cheese and pumpkin seed topping.

    No freezer movements.
    We had HM meat pie + roast potatoes + sprouts, carrots, cabbage + gravy for dinner.

    We have used cheese in veg mashes before but didn't have any grated, the Green's stuff is still defrosting.

    Organic veg is expensive, not too bad in Lidl, ASDA and Sainsbury's - when you can find it ! If I had room we'd grow our own - we are self sufficient in herbs all summer and have fruit.

    Didn't find anything in Tesco foodwise but got Green & Black's tasting collection for OH and mother on Christmas Day on offer. Just had omelette and salad for dinner.
