    Sponge cake mix - I take it you mean the dry goods only? Not the made up mix?

    Crumble mix - recipe please?

    Crumble is simply 3 parts flour, 2 parts fat, 2 parts sugar - I normally use my old imperial head - 6 large tablespoons of flour with four of sugar and half a standard packet of butter.

    Cut the fat into small cubes and add it to the flour and rub it in with your fingertips until it is like breadcrumbs then scrape down your fingers and stir in the sugar. That's it. (Or you can chuck it all in together and whizz it for a few seconds with a mixer or food processor)

    Sprinkle it over whatever fruit you want to use (I use brambly apples - 2 big ones, peeled and cored in 50p sized chunks and no added sugar)

    I use a dish about 5" across and deep then you get a good thick layer of crumble - a bit like shortbread. This makes quite a dry crumble but add any berries for a juicier one (the red will bubble through the topping and begin to caramelise).

    Cook at about 180c for 35 minutes until the top has turned pale brown.

    I'm avoiding sugar at the moment but I love crumble... I might have to make some mix and freeze it now!

    In to the freezer & cupboard: Bag of curly fries, pack of fishfingers, bag of frozen spinach, 5 pork chops , 20 halved mushrooms, bottle of ketchup. 2 tins plum tomatoes. 2 jars kenco decaff, 2 packets cupasoup and a pack of tripoline pasta:o
    Out: portion of cod loin, portion of chicken & sweetcorn chowder, packet of instant cous cous and a handful of breadcrumbs
    Used up: 1 red pepper beginning to go wrinkly and 3 wilting spring onions
    So very much a net gain :eek::o
  • Morning all!


    I made my own naan bread yesterday to use up some yoghurt and some of the flour mountain but it turned out a bit rubbish. Sadly I'd tripled the recipe to use up the yoghurt I has left so now I have lots of cr*p naan bread dough in the freezer too! If anyone has any good naan bread recipes I'd be pleased to hear them. :-)


    I also made a Palestinian pomegranate and lentil dish that I found a recipe for on the guardian site. It had loads of pomegranate molasses in (which I have a bottle of that needs using up) and the taste was a bit overwhelming for me but I've now got loads of that in the freezer too.


    Finally I made some celeriac and lentil soup for my tea which was delicious - thankfully. There's a few portions of that in the freezer too now.


    I seem incapable of having a NSD but I did only spend £1 on a bag of onions and a pot of natural yoghurt. I did also start filling up my basket at Approved Foods but gave myself a good talking to and shut my browser down.

    I used the naan recipe on here and they were great. I made 4 smallish ones, we ate 2 and froze the other 2. The frozen ones came back out the following week, were sprinkled with water and then popped in the toaster - lovely. What didn't you like about them?

  • I used a recipe out of a student cookbook I have at home - they didn't come out very fluffy. More crunchy.

    This is the naan recipe I followed and it worked well. I added a bit of garlic salt and some dried coriander I think. I made each one about the size of my hand (I have long fingers so around 7" x 4") as it was easy to handle.

    I will definitely give that a try. I think my 4 year old would enjoy helping with that so I'll give it a try at the weekend to go with Jack Monroe's peach and chickpea curry which he is a big fan of.

    Hi everyone, can I join you?

    I always try and do the monthly grocery challenges and try to also do a food cupboard/freezer inventory after my big monthly shop.

    I am a complete food hoarder and in yesterday's inventory I discovered a huge amount of tins and things that whilst they aren't going to go out of date anytime soon are taking up valuable cupboard real estate and my kitchen is overflowing with food.

    I have decided I am not going to do another big food shop until I have decreased my stores by at least 50%.

  • 2 portions of cooked roast beef out of the freezer but four pork chops put in. Gluten free porridge oats used up to make flap jacks and most of my butternut squash & swede used up plus a tin of butterbeans in a goulash which is just cooling. I have a quarter of a squash & a quarter of a swede still to use up & would like to make a soup so I shall hunt for a recipe as I am definitely not a chuck it in type of girl and prefer to have an actual recipe, lol! Also have mushrooms, onions, peppers, parsnips, broccoli, 3 spring onions, 5 sweet potatoes and 1 leek if any one can suggest a soup recipe for me!

    Not quite as planned, Had leftovers planned for lunch but then a friend turned up from about 80miles away so while she was talking to DH I quickly made parsnip and squash spiced soup, got rolls from the freezer and some uncooked hobnob dough for biscuits. It took just under 40mins to produce lunch, including cleaning the downstairs cloakroom, hoovering, tidying the kitchen and doing the floor...phew.
