Fajitas tonight - leftover tortilla dough out the freezer from last time (defrosted lovely and soft and rolled out well). Used a portion of tofu from the freezer and some of the HG peppers I roasted/froze last year (I thought they were sweet ones but they were hot!) along with a bit of HG onion that had been sat on the top since last summer and half a courgette from the veg box that had been in the fridge a few weeks. Made my own fajita seasoning and added some of the HG HM tomato relish from last summer. Opened the new pack of grated cheese and put it in the freezer after as the last bit of the last pack had gone green.. Cheap, quick meal and really good
Choice of ingredients to make meals from is getting smaller!
Freezer - portion of tofu, pack of grated cheese, 1/2 pack of chestnuts, 1 HM veg tagine and frozen veg/fruit.
Fridge - Nut butters, jam, 3 eggs, condiments & fresh veg.
Cupboard - various dried wholefoods/baking stuff, 2 tins and spices.
Rough meal plan over the next week or so, all will be made from scratch - fajitas/burritos/quesadillas, dahl/rice, houmous/split pea dip & flatbreads along with grain salads. I have some potatoes I might turn into patatas bravas but not sure yet what to eat with them.0 -
Evening All,
Ordered a teenytiny slow-cooker today as I think they sound just right for novice cooks like me so I'm hoping to be able to join you again soon. Getting a bit fed-up (if you'll excuse the pun!) with expensive and bland low-calorie ready meals. So, when the slow cooker turns up, and the accompanying recipe book, I plan to cook up a storm (or at least a brisket!) and it is just a 1.5ltr cooker so I don't think I'll have to eat the same thing day after day.
There is literally nothing left in my fridge other than a quarter of green pepper that has gone soft and the cupboards are bare too unless you fancy marmite or posh marmalade (with no bread or crackers to eat it with) Think I'm on the wrong thread really as I guess this one is about using up your stash of food, whereas I never seem to have a stash but at least I do make sure that I eat every single bit that I have and don't waste anything (other than the horrible jar of expensive rose & violet flavoured hot drinking chocolate someone gave me a few years ago, and I do use it as an ornament on the kitchen counter so not entirely wasted!) So, even though I'm probably not entitled to be on this thread I hope you won't mind if I stay.
PS Forgot to say Kirri, Patatas Bravas are one of my favourite things so when you make them would you mind explaining to me how to do it too please?0 -

The less in the cupboards the better I think, means you can buy/eat what you fancy a bit more.
Tonight I used up the last of the fresh courgette and onion, the last portion of frozen tofu and did fajitas again. Made another couple of portions of tortillas, put 1 portion in the freezer. I may as well have made a larger portion as they were ok defrosted.
Lunch was a HM tomato relish and cheese toasted sandwich with salad from the veg box.
Have put some haricot beans in soak overnight. Will cook the beans and freeze whatever are left over so I can just take out a few as I need them. Might have burritos tomorrow or else it will be lentil dahl or patatas bravas - will decide on the day.. Might make some fairy cakes too.0 -
Kirri (and anyone else!) if you are near a Waitrose their free Spring Harvest recipe magazine has lots of vegetarian recipes in this time. You can pick one up by the checkout, it's usually by the Kitchen magazine. Some of the recipes are online too waitrose.com/harvest - near the bottom of the list on the left hand side.0

Got it the other weekThe seasonal booklets they do are always really good for recipes and seem to have a lot of veggie stuff, I've kept them all.
I sort of made burritos today but only with beans and veg as couldn't be bothered to wash the sieve/pan again to do the rice.. I used a portion of frozen courgette just to use it up but was a bit mushy with the beans. It's ok on pizza but prefer fresh in burritos.. at least only 1 more portion of frozen courgette to use. Might try them with chickpeas next week. Added in veg box spring onion, frozen Waitrose corn, frozen HG hot pepper, HM tomato relish, last of the grated cheese. I'm getting good at making the tortillas now.
Lunch was toasted cheese and tomato relish sandwich with salad.
Revised probable meal plan rest of week:
Tue - fried egg, HG asparagus and patatas bravas to use veg box potatoes/tomatoes up.
Wed - red Lentil dahl and either rice or flat bread.
Thur - borlotti burgers and red rice salad.
Fri - frozen tagine (really don't like this).
Lunches - will have to make a bean dip and bread/carrot sticks/salad.
Snacks - fairy cakes.0 -
For dinner we had HM casserole - FF + whoops Onion bread.
In to freezer - nothing.

That sandwich is still calling to me Kirri *salivates* but I'm resisting as it was grocery shopping day today so I came back with loads of fresh salad, veggies and some chicken, hummus and eggs plus a couple of yellow sticker treats that had to be eaten today.
So, my afternoon snack was ready made honey-glazed prawns in a tangy lime & tequila dip and dinner was ready made Persian duck with basmati rice, roasted butternut and pomegranate dressing. Both delicious and a real treat but it's back to porridge/salad/boring dinner now until the slow cooker arrives.
Speaking of soups Mrs MoneyPenny, I was going to attempt a carrot and ginger one as I've got too many carrots in stock (big bag was cheaper than the small bag). Do I need to add something starchy to bulk it out, like potatoes or lentils? Not that I have any potatoes or lentils in the house of course :rotfl:0 -
No freezer movements.
We had HM wedges + sausage roll + poached egg for dinner. The sausage roll was reduced from £1 to 10p - 380 calories so we had half each.
