Eating out of the freezer and cupboards challenge - part two

    I can't bear to throw away the extra when I make meals, nor do I have a freezer to store it in. That TITH is going to be for supper again tonight and if I ate the correct portion size I'd be eating it for a couple more days after that! And that's not to mention the pudding which will take several days to get through (not that I'm complaining of course, just means that I tend to eat too much at mealtimes to avoid having to eat the same things for too many days in a row!)

    Are you all planning glorious Easter feasts? If so I might have to stay away from your photos for the next few days or I'll want to copy you and eat the same things (that cheese and garlic tomato salsa sandwich you made Kirri is like a siren song in my mind today!:rotfl:)

    Though must be difficult without a freezer, I don't like frozen food but it does save a lot of waste. I prefer to try and cook just a portion rather than batch cooking though so it can have benefits in eating fresher food.

    Mix of good things and things going wrong that needed to be sorted. Have won a few tickets to things so breaks up the bad things going on! Saved a bit on dinners too eating with family and included 1 free meal (I won) too and my mum gave me a few bits to bring home food wise.

    Might have another of those sarnies today - no easter feasts planned here - I've been so busy I've not thought about Easter yet!

    Not had chance to make the burritos even yet - this week will hopefully be calmer and more planned.. I bought some more cheese ready. Nothing in the freezer all week, just a loaf of bread out and 1 portion of the HG frozen ratatouille - I made an omelette and had that and some of last week's cheese as a filling.

    I must say whole foods are excellent with complaints, I had to complain about their Piccadilly branch cashew butter, as I wouldn't spread, it was clumpy and Just falling off the bread, I told them hsk was better lol, they gave me a refund and a off shelf jar, which cost way more than I had paid :-)

    No eating out the freezer or anything, went out for tapas and sangria last night, that sangria creeps up on you!

    Hangover lol?

    I've not needed to complain there yet but good to hear that - some of the nuts butters are hard to spread, I don't know why the cashew comes out different from batch to batch. I got the choc hazel butter this week :o and more of the salad bar selections, prepped fruit etc. I SO love that shop! Two small shops in Waitrose too this week.
  • Had half a pack of mozzarella and some eggs to use up today.

    Made olive bread -with the special offer black olives I bought but I've actually made this before with pickled green olives and that was nicer and would prob usually work out cheaper.

    Mozzarella and spinach (frozen spinach) quiche added in an onion and some frozen peppers and some chopped up plum tomatoes that have started to go a bit soft and thickened it up by adding some low fat creme fraiche I have to use up.

    It was delish and has fed 3 with second helpings and there is enough to take my uncle a dinner tomorrow

    Kirri by your standards that's a lot of supermarket shopping for you! hope you can work through the bad stuff yay for the good stuff though, no hangover thankfully, just lots of laughter with friends.

    I have taken a beef joint out ys, I have also taken out a egg fried rice and will have some for lunch, also came out 2 pints of milk, so I can hopefully finish up the porridge I have here.

    Its nice and sunny so im staying in, might open a window.

    In to freezer - HM Apple Pudding.
    Out of freezer - HM Smoked Mackerel Quiche.
    For dinner we had HM sausage casserole/dumplings + spring greens + onions.
    I made a Devonshire In and Out Apple Pudding too.

    Had to shop today as nothing in the house that would constitute a meal, so bought a YS roasted chicken thinking it would do for at least four days with the salad that I have already, and I got some tinned tuna as it was on offer.

    Five hours later and my two kitkats have eaten all but the wings/skin of the chickens and are camped out by the fridge hoping for more :rotfl:

    So, looks like I'll be having tuna salad for dinner until about Thursday. Fortunately I have a large stash of chocolate and a goodly sized portion of Mrs F's In and Out pudding left to supplement my salad so I won't go hungry :p

    ^ I don't feel so bad for sharing my salad bag & strawberries with the resident furries now :D

    Lunch was another toasted sarnie with salad.

    Dinner was a pie I came home with from seeing family with free veg and last of the salad.

    I've just made a batch of sultana fairy cakes as had all the ingredients in and I was craving something sweet.

    MNR - too much in store shopping for my liking! the second visit was just to waste time between appointments, I just got a few essentials to get my free newspaper and I had a voucher for a free quiche :D

    Gutted about your ys chicken, cats are sneaky when they want something.

    Been away from the board for a bit as I was at my mums for the weekend and I came back with home grown pork for the freezer as well as a whole salmon portioned up that my mum got us and she also gave us a huge pack of potatoe croquets that she got from the cash and carry. She also went a bit crazy on the Friday and made a huge fish pie that she gave us some of so that's dinner tonight sorted.

    Just need to decide what to have on easter home grown lamb or salmon? Speaking of Easter I will finally be able to have chocolate again (i gave it up for lent)

  • Decision has been made and its roast home grown lamb for Sunday. We had mushroom stroganoff and rice last night with left over for my lunch - roll on 1pm. As its the hubby's birthday today we are going out so nothing out of freezer :(
