  • Love the eggless cake mix - one of my sisters is allergic to egg so hasn't had sponge cake for years, how long does it keep for? Am thinking of Christmas pressie baking ...

    On freezing cakes, I've been freezing cake for years, so DS can take a piece of homemade cake to school in his lunchbox without having to bake midweek. His/my favourites are lemon drizzle cake - as per the recipe posted earlier, but cooked in a Swiss roll tray. Comes out about an inch or more higher, then the lemon & sugar all over for the drizzle. I then cut it into fingers, 3 rows and about 8-10 pieces per row. Then I put about 5-6 in a Chinese takeaway tub & freeze - they come out just fine! I've also done a carrot & orange version, just replacing the grated lemon zest with orange zest, and adding a couple of finely grated carrots to the sponge mix (helped when DS was avoiding veggies!)

    Am going to have a try at the lemon drizzle individual ones this weekend though - less mess! Plus as its the last week before payday I need to avoid every grocery spend I can!

    I'd argue that it is money saving, if you had to buy cake/biscuits of the same quality as home made they'd cost a fortune! Cheap cakes are just that - cheap, and what's the point of a cake that doesn't taste scrumptious? Waste of calories ....

    I made the eggless chocolate cake last week and it is still as moist and fudgey as it was when I baked it so deffo last a week - well wrapped in clingfilm and kept in the cupboard!!!

    Hehe! I'd love a slice of cake for an xmas treat!!! :) I'm thinking of making mini xmas cakes for hampers for people for presents!!!

    I like the carrot and orange alternative cake idea - I have some oranges so I could do this not buying any extra ingredients! mmmmm!!!

    read through the thread (do love a sweet treat) and there isn't pancakes yet. we halved the recipe as there is only two of us and still got about two or three pancakes each.

    i don't really cook (although i am trying to improve on this as i like the idea of batch-baking.

    when i feel rough (or bored, or low), i love making pancakes. it is easy, only really got five ingredients. (six if you include a topping).
    anyways... i highly recommend pancakes. it is so easy, you can even encourage the kids to get involved. can't wait until my nephew is old enough to make pancakes with. (he is only two just now). be good to have someone else to blame the mess on.

  • Guys when can I start making my Christmas cake? It feels like it should be started now, and I've been given a book which tells you measurements for different cake size requirements. ( only mum and SIL like Christmas cake so they end up eating it until September!)

    No baking this weekend as many meals out planned ( and its not very fat club friendly) but I think I may have to do some cookies as the week progresses

    hey flyinggiraffe! I usually do mine in the October half term!!! That gives it a good number of weeks to be 'fed' with brandy before the weeks of layering on marzipan the icing!

    But (if you want to) remember to give yourself steeping time for the dried fruit in some alcohol!! :D I'll be doing mine one weekend around October half term this year!

    stewby - I LOVE pancakes - thank you for your recipe :j - we have them maybe every few weeks or so for Saturday breakfast!! :) and if you're low on eggs you can make the recipes as stated with one egg instead of two and they are still perfectly fine!

    My secret weapon is the Delia recommendation of a dollop of melted butter into the batter just before you start ladling it into the pan!!! Mmmm, call the diet police!!! :rotfl:

    Well my eggless cake is in the oven. Had a minor issue with the batter leaking out my cake tin a bit. Is it meant to be quite runny?

    haha! great one wegle!!!

    yeah - mine was quite runny!!! and it can stick a bit to the base as the tin isn't greased! I ripped it out while still hot - hence why i iced it! whoops!!! :rotfl:

    Might try mixing in bowl next time so I can grease the tin!

    Hope it comes out ok!

    I mixed it in a bowl and then stood looking at the tin for about 10 minutes debating greasing and lining it, but thought, I'd better stick to what the instructions say.

    It's been in 30 mins and is still very runny in the middle. :( I used a deep 7inch round cake tin so it might take a bit longer to cook through as it will be quite tall. Was gonna slice it in half and fill with butter cream in the middle and on the top.

    I'll just have to wait and see how it comes out. Worst case scenario it won't look pretty but hubster and I will still enjoy it!

    How did you make your buttercream icing C-R? Ive only got about 50g of plain choc in the house. Do you think butter, icing sugar, the plain chocolate and a bit of cocoa powder would work?
