  • Thanks for the eggless chic cake. I find I often blow money on a Friday night, for a sweet treat or chocolate because I'm tired. So making one beforehand is the master plan. I have no eggs , so this one is free store cupboard cake.

    For soured cream, google it, you ll find the answer comes up on old style board :rotfl: like most cooking secrets. Once I realised how inventive people were, I tried experimenting, and most things worked lol. Greek yoghurt, cream and lemon juice, creme fraiche maybe with lemon juice, though not sure.

    Thank you! what a great idea to make our own soured cream!!! Who'd've thunk it!!! Just have to wait now for OH to buy himself some Guinness so I can nick it to bake a cake :rotfl::rotfl:

    Going to make an eggless banana bread this weekend from now-brown leftover bananas so I'll keep you all updated on how that turns out!

    And if you do the chocolate cake bess1234 - would love to see the pictures!! :)

  • :TWell that's a whopper of a chocolate cake. If it forgives that I ran out of plain flour and used self raising, and had to split it into two cake tins , it will be gorgeous for tonight. I'll make some buttercream as don't want to go the shops and defrost a few of the raspberries to sit on top that I was saving for jam. Yum yum.

    Can you freeze sponges? That could be next weekend sorted too if you can.

    I reckon you can freeze it - i read that people freeze their cakes all the time!!!! :) You could freeze it in portion slices so you only have to get out a slice at a time when you need a fix?

    Mmmm, buttercream! I made it for the first time to go with this cake - is very nice!!! Lasts almost a week in the cupboard btw - I've still got 1 slice of mine left and it's just been kept int he cupboard with clingfilm!!!

  • I have frozen cake, I tried it for the first time last week, it was a lemon curd cake, we ate half and I cut the other up in slices and put in the freezer. I can't comment on how it would have tasted plain, to be honest I didn't fancy it just plain after being frozen but it was fine served up with custard :)

    I'm going to attempt the eggless cake tomorrow, popped to the shops for cocoa powder as I ran out last week, bonus though I found 1p on the floor when I was there!
