    well i have never frozen the mix but its worth a try, suppose i would open freeze the balls and bag them when frozen, glad you like the hobnobs

    I know it's a bit late now, but the first time I made them, I used baking powder because I had no bicarb. They were fine!

    I was just about to suggest baking powder, I used double what was stated for bicarb :confused: seemed to come out ok
    One day I might be more organised...........:confused:

  • Thinking I'd make some of Twink's famous hob knobs for the first time a few weeks ago I stocked up on ingredients in Tesco...only I picked up baking powder by mistake (and I already had a pot at home :rolleyes: ) Waste not, want not, so have made no less than four very successful batches of hob nobs substituting baking powder for bicarb of soda :)

    Made another batch of hob nobs tonight, forgot the bicarb........again! Added fruit this time, the mix was very crumbly and I couldn't roll it out to cut them so i ended up squishing it flat on the work top then very carefully lifting each one onto the baking tray with a fish slice.

    Result: baked at 170oc in my fan oven and they are so moist and chewy they are just like the oatmeal and raisin cookie you can buy in the instore bakery counters at supermarkets :D

    5* recommendation for making them this way and I will definitely do them again like this.

    arkonite_babe i have found the mix goes dry and crumbly if the melted butter is too hot when added to the mix

    Ah well that's what happens when you have a nine year old helper in the kitchen and you are trying to make rice crispie buns at the same time!
