Twink, I know you've been thanked many times, but these are truly fantastic and I'd like to add my thanks. Incidentally, is it okay to freeze half the mix, and make a 2nd half up fresh in a couple of days time? Should I still make the mix into balls before freezing, if so?
well i have never frozen the mix but its worth a try, suppose i would open freeze the balls and bag them when frozen, glad you like the hobnobs0 -

I know it's a bit late now, but the first time I made them, I used baking powder because I had no bicarb. They were fine!0

I was just about to suggest baking powder, I used double what was stated for bicarb
seemed to come out ok

Made another batch of hob nobs tonight, forgot the bicarb........again! Added fruit this time, the mix was very crumbly and I couldn't roll it out to cut them so i ended up squishing it flat on the work top then very carefully lifting each one onto the baking tray with a fish slice.
Result: baked at 170oc in my fan oven and they are so moist and chewy they are just like the oatmeal and raisin cookie you can buy in the instore bakery counters at supermarkets
5* recommendation for making them this way and I will definitely do them again like this.0 -
arkonite_babe i have found the mix goes dry and crumbly if the melted butter is too hot when added to the mix0
