Yesterday, I made your Anzacs, Aussie. OH absolutely loves them (he's a coconut addict :rotfl: and I used honey instead of the golden syrup this time).

But I'm still having the same problem that I'm having with Twink's - they are still very 'moist' underneath and of a 'chewy' texture. Are they supposed to be 'moist and chewy' or am I doing something wrong?

Maybe 'over greasing' the baking tray (though I DO flour it as well!)?
Would greaseproof paper be better for lining?
Am I using too much margarine in the mixture - I found it a bit difficult measuring marg in a cup?
Too much golden syrup/honey - though I DID use a proper measuring-spoon for this?

    I await your advice ladies ;) .

i only need to lightly grease my trays no flour needed, can only think you need to give the hobnobs a little while longer in the oven, every oven is different and you will get to know how long to bake yours, try a few mins longer anyway see if that helps

glad everyone liked the biscuits scotnan

It could be that I'm overgreasing and maybe need to leave a little longer.

Although I've had this cooker for over a year - it was 2nd hand when I got it and the oven thermostat didn't work. I had that sorted just before Christmas and have only started baking again in the last couple of weeks - so it is taking a while to get back into the swing of things and also to get used to the oven-temperament, lol!

I tried leaving the last tray of Anzacs a little longer, but they were still a little moist underneath and had started to go a little 'brown' instead of golden.

Think next time I may do the following:
not as much grease on the tray
slightly lower temp on the oven
leave them in a little longer but keep an eye on the colour

Having said all that - everybody loved them just the way they were:rotfl: . In fact OH is mooching around in the kitchen right now - wondering where my most recent 'hidey hole' is!!!

Ollie I don't flour my trays. I use only a little butter to grease. Never use margarine. :D I've never used honey either. My, my aren't you the little rebel. ;)

They are usually pretty brown and not that scottish white colour that Hobnobs are. :D Look at Penny's photo. I'd say they need cooking a bit more. They don't like a hot oven as they burn easily. Glad you enjoyed them anyway.
Don't worry about the world coming to an end today. It's already tomorrow in Australia. ;)

Meant to say earlier, I know this isn't strictly the place for this but just thought I'd mention, for anyone else making the hobnobs and is a bit short of space for letting them all cool, I manged to pick up a 3 tier cooling rack in Tesco reduced from £4.95 (or £4.50) to £1.50. Obviously with the 3 tiers you can get all the hobnobs on them (or anything else) and not have trays/plates all over the work surfaces :D

It was so funny at the checkout the cashier said oh are you going to be baking then? and without thinking, I said yes I'm making Twink's hobnobs :o she said oh I've never heard of them before, are they new? :rotfl:
  • Hi all

Just dropping by to tell you I made this recipe yesterday. I saw the thread, popped in, wrote the recipe, went to kitchen, turned on oven, sought the assistance of DS and half an hour later we're enjoying fabulous biscuits. Thank you.
