    From what I've read some people freeze the mixture (in balls, ready to put on a tray and press down once defrosted), while others freeze them cooked (though they can soften slightly after freezing/defrosting)

  • :joh my my,,just made twinks again tonight an sitting infront of me whilst making them was the huge bowl of blackberries we picked today. Decided to stick some in half the twinks mixture,bit fiddly getting mixture to stick but i sort of 'splodged' (that well known baking term!) it around the blackberries,,,they are stunning,,like a sort of blackberry crumble.
    Obviously i had to eat 3 to make sure they were lovely before sharing it with you all ;)
    Life happens when you are busy making other plans ;)

    Batch 4 made (and tested)

    Added 1tspn Almond Essence, 6oz finely chopped glace cherries, 2oz sliced almonds and 1oz ground almonds to the dry mix. Used the full 250g pack of St0rk and a very heaped tblspn syrup to try and balance out the extra 'dry' ingredients.

    The extra St0rk and syrup worked a treat, but they still don't have enough of an almond "kick" for me (and the sliced ones made scooping the mix with my melon baller more difficult) - so next time I make this type I think I'm only using ground almonds (but 2 or 3 oz) and adding extra almond essence ;)They wouldn't go amiss with extra cherries either

    I made 69.... but have had to taste 4 to make sure the browner ones weren't too crisp, the lighter ones were cooked properly, and the total mishapes aren't going to fall apart completely when bitten into rolleyes.gif

    Leaving them on the baking trays to cool was essential again (like with my raisin ones), so I ended up using every baking tray and tin I could find. I must call into one of the larger supermarkets on my home from DDs tomorrow and get some more proper baking trays (also need some more silicon baking sheets, as I'm getting through my limited supply of greaseproof at an alarming rate with having to use all these tins :eek:)



    Hoping to find time on Sunday to try a chocolate chip version - specifically requested by DS after he tried Wednesdays raisin version (added 4oz raisins which he declared isn't enough, and I tend to agree though I reckon I can remove some of the normal granulated sugar I added as the raisins and demerara give them enough of a sweet kick)

    Back when I was a lurker I tried Twinks' hobnobs - they were really scrummy! I made variations of the recipe as well - with raisins or dessicated coconut... hmmm! It's been a while since I've done any baking but think I should get back into it again.

    Cherry and almond variety went down a storm with OH, DD, GD1 and GD2.

    DD and I were surprised that GD1 kept coming back for more as she "doesn't like nuts". When she twigged almonds are nuts - and started to 'yuck' at the cookies - so we told her they're "not real nuts" and she happily carried on chomping ;) (She was 7 last week)

  • Made some of these today to the original recipe and they are yummy, but very crumbly. Not sure what I did wrong except I only made 20 balls and they expended loads to make more of a tray bake.:o Will try smaller balls next time. :D
  • I recently made the twinks recipe but as a 'traybake' kind of thing (technical!) with sultanas - went down a treat in my house - like extra yummy flapjack!
