Made the hobnons for the first time tonight and have eaten 3 already, and they havent even cooled yet! I think I may have to give some to the neighbours so I dont eat the lot! They are gooooorgeous (the hobnobs I mean, not my neighbours, although the man on the left is ok!;)).
I cant wait to try some different varieties, and am tempted to make some cinnamon icing to sprinkle on the ones I have just made. yuuuuuuuuum!:T0 -

I usally halve the amount of sugar called for in a recipe as I find most things too sweet for my taste. I use about 160g of sugar in this recipe instead of 225g.
When I tried to use half the amount, I found the biscuits were a bit soft. Coincidence?
Does anybody know if sugar has a purpose in baking apart from making things sweet? I vaguely remember hearing somewhere it is necessary to make a crumb structure. Is this right? I always cut the sugar by half when making hobnobs. When I take them out of the oven they are a bit soft, but seem to harden on cooling, I usually make them when I´m going to use the oven for something else, then when that´s cooked I just put the hobnobs back in while the oven cools down and they
come out crisp then

I have had mixed results with the crispyness of mine? I ahve tried using plain flour , will try less sugar( always a good thing) . Today I used scottish oats instead of Mr T's value ones and it made the biggest difference, but actually the Girls like them anywhich way.:Tmum to Min Pops and Wiggy et al.

Thanks both. I think it was another reason that mine came out a bit soft (kitchen was v. steamy that day), was daft OH that suggested it was the lack of sugar that caused it. I only use half the amount of sugar too and substitute some golden syrup for honey, otherwise they are just too sweet! I also use Doves wholemeal flour.Here dead we lie because we did not choose
