Homemade hobnobs?

Hi, i've just started getting into baking - so far all i've done is bread, which went quite well - so i'm not all that clued up. I'm gonna have a go at Twink's Hob Nob's tonight, they sound really good, but i don't have any bicarbonate of soda in. Just wondering if i could replace it with something else, possibly dried yeast?0

Do you think mincemeat would go well in twinks? I suppose it would be similar to using mixed fruit maybe???
I have half a big jar to use up so was thinking of muffins (reason why I bought it), in a fruit loaf thing and twinks.
There is a good recipe on Delia`s site for mincemeat bars which uses up mincemeat and is really good...they are in the Christmas book under wholemeal mincemeat slices - worth a look.
I agree with original poster... Jexygirl - everyone just knows them as Twinks . I gave them to a friend for fundraising and they were soooo popular! Go Twinks!0 -
I did put mincemeat in the twinks mix and made a traybake and it was very very nice and i will do it again!0

Ella,
I dont lid mine (they dont last long enough around here!) but the first batch I did lid and they were fine for a week or more, not much help sorry :SI will pay jexygirl the compliment of saying that she invariably writes a lot of sense!0 -
