helyg - I didn't have bicarb either so used a teaspoon of baking powder instead

Thanks Twink and thank you for adding it to page 1 - just wondering if anyone has sucessfully made this recipe with less than 225g / 8oz of margarine or butter? I can see this is the wrong time for me to try and eat better with a delicious recipe like this!

Fab recipe as is but yeah I would like to know this EagerLearner

I've forgotten the bicarb and they came out fine.

Brown sugar will be fine too. I would expect it to give a slightly different flavour, but not in a bad way!

Well they worked without the bicarb... however I don't think I should risk feeding them to OH and the kids just in case the lack of bicarb is a problem for them... so I will just have to eat this whole batch myself...

the bicarb has been left out before and the biscuits are ok but i guess it must have a purpose and honey or maple syrup can be used instead of syrup

not sure about reducing the butter, mix might be too dry but try looking at reduced fat spreads that you can bake with and the mix has been used as a traybake too

looking back i see olive spread and light flora has been used and one third of sugar substituted for finely chopped crystallized ginger also use cinnamon or ginger powder to flavour

I have some eating apples that are past their best and I was wondering about grating some into the next batch. Would it work?
The first lot that I made yesterday have half gone (can't imagine where!!) and I'm going to do some a little smaller for dd's packed lunches.
    Thanks.

Thanks twink - I think I *need* to make a batch with no alterations at all for research purposes first ;) Loving the idea of adding apple, as this might add in the extra moisture that reducing butter could lead to.

Any ideas for the 'lighter' version of Twinks treats would be lovely - sacrilege I know but I still want to eat them! :T
