mmm.. love courgettes, had to google mucver and they look delish!
have you converted the recipe to a SW friendly version maman?
just made a couple of courgette, carrot + onion quiches.. never tried one using cottage cheese before so urging them to cook so I can try them
Sadly I haven't thought of a way of converting the recipe and I just can't bring myself to use flour. I'm bad enough when it comes to thickening a whole casserole. I just gorged on them when I was on holiday (holidays are off plan;)).
Do let me know how your quiches turn out. I made my first frittata/Spanish omelette this week and that was great. I'm interested to know what it's like with cottage cheese.
I just had some ham & asparagus for my lunch. Mmmm!
Our menus are getting pretty boring lately so I've planned two new (to us) dishes for the coming week. We're having coriander chicken tomorrow and Monday I'm going to make a lamb rogan josh using up LO lamb from Sunday.0 -

my quiche dish has disappeared so had to split it between two foil pie dishes I had, will do it again.. love the little book of lunches, its my most used one at the moment.. won a few raffles in group for £10 spends in the shop so have quite a collection of books now.. enjoying trying different stuff from them I wouldn't usually thought of doing.0 -

Hi all, I've started sw this week having lost some weight with it a few years ago, before extra easy. Trying to do it myself with just the books, and this forum now I've found it :-), is there any way of finding out syn values online without paying for the classes each week. The app requires member passwords :-(
I think I need to log onto this forum from my laptop and read everyone's tips :-)

Just re cost, I find I sometimes end up with opened jars in the fridge with half the stuff left in, and a warning on the jar to consume within three days - I wouldn't be eating anything else if I did that. Would you still eat it? and how long over the date would you go?0 -

I tweaked it a little but this is the recipe from the book..
2 courgettes
2 red onions (halved and finely sliced)
1 red chilli, deseeded and finely chopped
seasoning
100g low fat natural cottage cheese
6 large eggs
1 tsp dried mixed herbs
small handful finely chopped fresh mint
serves 4
free on all plans
preheat oven to 180c / gas 4
Coarsely grate courgettes and place in large sieve, press down to remove as much liquid as possible and set aside.
Lightly spray a 20cm round shallow baking dish with frylight and set aside.
Spray a large frying pan with frylight and place over medium heat. Add onions, courgettes and chilli and stir fry for 10 mins. season well and transfer to the prepared baking dish, spreading evenly across the base. Spread the cottage cheese over the vegetable mixture.
Beat the eggs in a large bowl, season and add the dried mixed herbs and mint. Pour the egg mixture over the cottage cheese.
Please in the oven and cook for 30 mins or until set and golden. Remove from the oven and allow to rest before cutting.
Can be eaten warm or cold. If serving cold cool, cover and chill until serving.
** I only used one courgette, 1 onion and added a grated carrot.. Didn't use a fresh chilli, lazy chilli instead and didn't add mint either.. Added the red peppers on top too0 -

until it smells, looks or tastes 'off' or goes mouldy / furry0
