    I think those jar/tin sauces are better using cooked chicken-doesn't seem to be so 'wet' & the short cooking time puts me off using raw poultry too.

    Cook a head of broccoli (cut it up into small florets) until just soft. Drain and reserve the liquid. Put florets into ovenproof dish and top with chopped leftover bits of chicken (you can get away with using the not so nice bits from underneath). Make a plain white sauce using the veg water and milk (make about 3/4 pint) and season the stock with balck pepper and a good pinch of nutmeg. Pour over the chicken dish and top with a little grated cheese and some breadcrumbs. Bake in oven 180 C or gas 4 for about 20-25 mins. I serve this with jacket potatoes and carrots and sweetcorn. Enjoy!

    i have a ready roasted chicken that i have stripped off the bone that i really need to do somthing with asap.

    i have ended up eating at a friends and i think because i am shattered and full, my brain has gone totally blank what to do with it, dont think i fancy curry.

    help??? :beer:

    How about cramy chicken n veg pasta

    Frying some onion -peppers and mushrooms ( i use frozen), add the chicken, some frozen peas and some creme fraiche/cream/sour cream, plenty of seasoning and a spoon of wholegrain mustard, heat until chicken hot....pour over pasta...or rice

  • My OH really loves this one:

    Cook 6 oz of long grain rice, rinse and place in a shallow greased oven proof dish. Take chopped chicken and spread over the rice (you can get away with using quite a small amount). Melt about 1.5 oz of butter and stir in same amount of plain flour. Gradually add 3/4 pt of chicken stock (you can use real stock or make with a stock cube). Cook stirring until sauce thickens. Remove from heat and when cooled slightly beat in the yolk of an egg. Grate about 6oz cheese and stir half into the sauce. Pour sauce over chicken in dish and sprinkle top with the rest of the cheese. Cook in moderate oven 180C or gas mark 4 until top is golden brown. Serve with veg such as sweetcorn and broccoli. Serves 3-4 depending on how much chicken you have.

  • Chicken and Spinach Lasagne... pack in extra green veggies if you like I can get away with broccoli in there for my DS... use a bit of nutmeg in the white sauce... yum. Like you say, sometimes I think I will die if I see another curried chicken.

    Last night I realised I had to use some thighs so I did my take on chicken marengo... make a onion and tomato sauce base with garlic and all the usual herbs/ pakrika add some green or red peppers, add chicken, (I cook the thighs in the sauce in the oven but see no reason why you can't use cubed cooked chicken meat) serve over rice. You can also put in courgettes and black olives if you want it a bit more ratatouille-ey - if that is a word !!

    i think i will go for some kind of chicken sheperds pie with campbells soup. i have loads of spuds to use too.

    they all sound good though!!
