    if you have the right spices in you can make your own fajita mix

    the recipe makes the equivalent of one of those little packets of dry mix you buy & it's used in the same way ... but I make up a larger quantity, keep it in a sealed tub & use roughly 3 Tablespoons for up to 1lb chicken/beef/pork/veg

    1 Tablespoon cornflour or cornmeal
    1/2 teaspoon chilli powder, or to taste, maybe try 1/4 teaspoon first if you don't like things too spicy
    1 teaspoon salt
    1 teaspoon sugar
    1 teaspoon paprika
    3/4 teaspoon stock powder or crumbled stock cube
    1/2 teaspoon onion powder
    1/4 - 1/2 teaspoon ground cummin
    1/4 teaspoon garlic powder

    cook as per packet instructions

    I like to add a squeeze of lime too
  • In the recipe index there is a yummy recipe for a sort of layered bake with chicken, potato, aubergine and onions. I made it last month and it was gorgeous- OH loved it. You could put peppers maybe instead of aubergine?

    just had a look through the cupboard and have cumin, ginger, allspice and coriander & garlic & tomato puree - is that ok for curry?

    If you cut the chicken breasts up into strips, they will go further, and will make into fajitas quite easily.

    Or what about stir-frying the thin-cut strips with thin sliced onions, peppers and carrots and serving with egg-fried rice?

    I woke up yesterday morning and found my freezer door wide open and most of the food ruined. I cooked and saved what I could but I'm left with loads of food now that needs to be eaten quick.
    I made bolognese, chicken curry, rabbit curry, stroganoff, casserole...I was so tired at the end of the day I only made Beer but chicken out of the last two chickens I had and I'm now stuck now with two cooked chickens in the fridge.

    Has anyone got a tasty recipe I can try out.
    I have cream, soy, honey, mustard, cheddar cheese, spring onions, red & yellow onions, garlic most herbs and spices. rice and potatoes
    I've tried a few recipes on the net previously but find most of them very bland.

    Since the chicken is already cooked I cant marinate it, can I?

    You can refreeze it now it's cooked. If you marinate it will soak up too much flavour I think, plus marinating tenderises and I don't think cooked chicken needs that! Otherwise you could make a big rice/pasta dish with cooked chicken and veg in, like rissotto. Maybe chicken in white sauce, a pie, put some on pizza, make fajitas, a chicken omelette?

    I've raided my cupboards and found a packet of fajita seasoning. Hubby will pick up some lettuce and cucumber on his way home....dinner sorted. :j Will refreeze the rest
    Now why didn't I think of that? The 11hrs I spent in the kitchen cooking probably exhausted my brain.:rotfl:Thank you for all the suggestions and your quick reply x

    you could also use it in an omelette, fried rice, sandwiches, in savoury rice, pasta salad, no cook chicken couscous

    The possibilites are endless. I'll add your thread to the first link later,to keep all th e information together

    Don't forget to make some stock , which can be transformed into soup. May as well make the most of what you have :) (or roast and freeze the bones to make it later :) )
