We normally do things like:
Chicken muck muck! Leftover chicken with a tin of campbells mushroom soup. Posh name "chicken Supreme":rotfl: ...serve with rice. Or put a pastry bottom and top on and you have a pie..serve with mash and veg.
You can make a lovely curry with leftover chicken.
Quiche...lovely and you can freeze into portions.
Chicken Lasagna. Just use the chicken instead of mince.
Chicken Crumble. Place leftover chicken in a shallow dish, pour over gravy or white sauce, then knock up a savoury crumble mix (flour and butter)...sprinkle over the top and some grated cheddar or red leciester...serve with new pots and veg.

I have just put my chicken in the oven for roast dins yummy, but what can i do with whats left over, theres always some chicken left on it but not really anything much decent for sarnies, can i boil the carcus or something to make soup? i'm sure i read it somewhere before or make some sought of meal out of it maybe with rice? i have a stock pot but other than that i don't know anything bout making soup or a meal from it lol, would appreciate what others do with theirs and perhaps a recipe for idiots like myself as not that great in the kitchen, on a budget though which has just been tightened even more! Its for a family of 4 well 2 little ones that dont have big tummies yet.0

we do 'left over stew' :T usually on the Tuesday after a roast on Sunday - (mondays are lazy cook days - something like fish fingers with chips & beans or a Tapas thingy:o ) thats all the left overs- yorky puds, roast tatties, veg, sauce the lot - into the slow cooker - lovely - you could do the same in your stew pot for 2-3 hours (sprouts :eek: are great in this, I have no idea why!)
I then freeze the bones & when I have 2 or three, I break the large bones - easy when frozen & boil them up for stock.
The stock I then use in 'left over stew' next time I have a chicken based one, although you can used the stock for anything.
Sometimes I will roast the bones before boiling & this makes a browner stock - you can do this from frozen as long as they have a nice long roast (in bottom of oven while next roast cooking) &/or nice long boil.I THINK is a whole sentence, not a replacement for I KnowSupermarket Rebel No 19:T0 -
I came across this and thought I would share it.
Take your strips of Chicken and coat into beaten egg, then coat with breadcrumbs and oats, with a ittle seasoning and then bang in the oven.

I have some lovely leftover roast chicken and masses of courgettes and potatoes growing in the garden. Has anyone got a nice recipe to incorporate both please? No spicy food though - can't tolerate it sadly!

Omelette? Microwave potatoes + fry/grill courgettes then make an omelette, add chicken and put some mascarpone/feta/other cheese on the top

You might think a bit boring but I'd roast the courgettes and spuds in lots of olive oil and garlic (can you tolerate that? If not I guess some other herbs???) and add to the chicken. You could bung in some onion and perhaps cherry toms too if you had them.
Mmmmmm mouth is watering now.......
As for courgettes I made a lovely onion and courgette quiche. Very tasty, especially when they are sauted in butter and then added to the quiche.

For the first time in history I managed to save loads of chicken from yesterdays roast (I hid them!) as they usually get picked to death during the afternoon.
So I've hidden them in fridge and am going to cook them with a curry sauce tonight. Any suggestions or tips on how to make the chicken taste soft and lovely still, do I fry it for a wee while or something as I have an awful feeling its going to be chewy?Lynzie Lou :dance:0
