hi if the chicken has been cooked you can freeze it I get them from the supermarket rotissery when they reduce them and make up loads of curry and freeze it in batches handy for quick meals0

Cut the chicken up into small pieces and stir fry with some veg and noodles. Add some soy sauce and you have a lovely stirfry.
If you have the bones left, you can make soup too.Getting there... A deal at a time. :T0 -
You could always buy pastry, yeah, yeah I know I shouldn't but I cheat occasionally.
I also mix cooked chicken with cooked mushrooms ham & a white sauce & serve it with pasta

Perhaps you could buy some pastry? I make my own but I don't think it is that expensive, or a value pastry mix or something. I made a lovely chicken pie the other week with a really pitiful amount of chicken, a few mushrooms and some chicken gravy granules (runs for cover at that bit!). It is surprising how little it took to really stuff the pie. I'd stick it in the freezer and wait til you have pastry.0

I make a chicken and leek pie. Just make a white sauce, fry off the leek, add it to the sauce with the chopped up chicken and a chicken oxo cube. I guess if pastry is really a nono then you could add a mashed potato top and maybe some -peas and sweetcorn to the mix. Or again the same mix with lasagna sheets layered in between.
If I do a big chicken I usually have enought for a roast dinner for the 4 of us (2 adults and 1 x 4 year old, 1 x 3 year old), then enought for a pie filling, also a chicken curry and soup with the carcuss.0 -
my fave leftover chicken dish at the mo, is chicken and sweetcorn bake.
I make a white sauce:
25g butter
25g plain flour
1 pint of milk
melt the butter, add the flour, then add the milk gradually, heat until it thickens.
Add to the white sauce:
salt and pepper
parsley (1tsp)
garlic powder (1tsp)
Leftover bits of chicken in small pieces
sweetcorn
(and anything else you fancy chucking in lol)
Place in the bottom of an oven proof dish and top with mash, put in oven to crisp up the top.
you could probably adapt this to make a pasta bake, or just serve with rice.0 -

I had roast chicken on sunday, then yesterday cold with a salad and tonight the last of it will be made into "goujon" type things.
Today I'll pick all the remainder of the chicken off the bones, perferably in long strips or chunks I find using fingers best. I then dip these into a mixture of beaten egg with salt and pepper, and then into breadcrumbs (old crusts etc whizzed in the blender and stored in the freezer - nothing gets thrown away). These go on a baking sheet and in the oven for about 20 mins until brown and slightly crispy, you can add herbs and spices to the breadcrumbs if you feel the need. Your little one might like these as similar to chicken nugget type thingies.
I started with two chickens yellow stickered at the Coop (£1.13 each) they will have fed 2-3 adults for 3 consecutive evening meals plus my two westies will get the very last of the pickings from the bones and skin in their evening meal tonight.
