:j hi folks! Just wondering what to do with a chicken I cooked last night. I usually buy a small one and we eat it pretty much in one go!But there is so much left. Can anyone give me any quick recipes that don't involve too much?:rolleyes:

Yes you can freeze it as it is now. Some people split it into portions, and add to recipes at a later date after defrosting. I have done this, altohugh I hve to say, the chicken dissolved somewhat in the recipe I did ( white wine & mushroom sauce)
Theres loads to do with it
Id do a chicken curry , which can be frozen into portions for a late from work oven food. tin of chopped toms, passata, onions, mushrooms, tin chick peas, 2x small potatoes peeled & cubed, peppers, 2 tablespoons balti paste. Wack in pan on low simmer for an hour, add chicken peices about 20 mins before the end.
In a white sauce, make a roux based with milk, butter/flora, plain flour, salt, pepper, ( or tin of cambells condensed mushroom soup if you have it) add strips of peppers, mushrooms, finely chopped onions. This is fab for the freezer, and goes really well with rice or pasta.:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

When we buy a chicken this is always the manor in which we use it. First a sunday roast with the chicken, then strip the carcass, the leftover breast gets kept for sandwiches, the leg meat gets used up in curries and other freezeable chicken meals, and the wings are always the chefs bonus!!!I had a plan..........its here somewhere.0

Our Roast chicken on Sunday didn't last long as the puppy ate most of it0

We always have day1roast chicken dinner
/chicken and stuffin sarnies tea(if we are still hungry!)
day2 chicken,sweetcorn and mayonaisse on a jacket potato lunch
chicken curry (see lynzpowers recipe) tea
then with whatever is left i make a chicken soup that can be eaten then or frozen (brilliant when you have cold and want comfort food!)
boil all the chicken and skin in a pan for around 2 hours (this is the stock)empty the skin and bones drain stock in2 a pan
then add chopped onions/garlic/parsnip/turnip/carrots (sometime i add bacon)
and simmer for another hour and add anything else you want,
I don't have a slow cooker so have to do it the old fashioned way!official dfw nerd club member no 214

I didn't want to start another topic about cooked chicken, but wanted some thoughts...
I cooked a HUGE chicken yesterday for our dinner, but my sister and her boyf weren't home, so it was just me, mum and dad.
I'm going to make soup tomorrow, but for tonight I was thinking of a pasta bake type thing... I was going to fry off some bacon we've got hanging about, with some onion and pepper. Mix that with either pasta sauce or soup, and cooked pasta. Then stir in some chicken, bung it in a dish and whack it in the oven. This will again be just for the three of us, I'll probably save some meat for sister and bf.
I'd really appreciate any thoughts anyone has - ideas to make it better? Changes? etc etc.Blood donations to date: 10 | Type: O negative[/B][/CENTER]0
