This is a really cheap meal to make, with any left over chicken, or turkey ,or you could use a tin of tuna, maybe.
Chicken/turkey
pasta
tin of tomatoes
dessert spoon of tomato puree
courgette(diced)
mushrooms(diced)
large onion (diced)
peppers(diced)
pepper to season
grated cheese
cook the pasta
in a seperate pan fry the onion, courgette,mushrooms,peppers and add tin of tomatoes and tomato puree and mix with pasta and chicken and add in a cassorole dish, sprinkle on cheese. Put in oven about gas mark6/7 for about 16-20 minutes. Serve with garlic bread.0 -
I cooked my left over chicken like this...this is a quick and easy meal and nice served with garlic bread..
left over chicken cut into small pieces
mushrooms, sliced
1 onions, chopped
1 small tub of double cream
dried oregano
Saute onion until soft, then put the mushrooms and saute until brown. Put the chicken in and saute for another 4-5 minutes. Put the dried oregano and let it infuse for a couple of minutes , then add the double cream. Bring to simmer on low heat for about 4-5 minutes. Add salt and pepper to taste and pour over cooked pasta ( which actually takes longer to cook than the sauce!!)...Enjoy you quick meal using your left over chicken or you can even replace the chicken with turkey.:pSealed Pot Challenge 2012 #1502:)

Hi have been directed over here for some help. Last week i saw a recipe somewhere for a chicken and mushroom pasta bake, could anyone help please as i need to use it up today, thanks, and if anyone has any other recipes for using leftover chicken i would appreciate it. Thanks :A0

you can use coked chicken in much the same way as raw in recipes
EG for a chicken & mushroom pasta I just make a white sauce with milk/marge/flour
In a seperate pan id fry off some sliced mushrooms, chopped onion ( tiny bit f oil) and other veg if you have it ( courgette? peppers??) and once this is fried off add to the white sauce mix. sometimes to this I add a pinch opf dried herbs, bit of black pepper ,creme fraiche or a splash of white wine if i have any in. Chuck the chicken in at the end to heat through.
I dont bake mine, just serve with pasta or sometimes rice. Ive also got a packet of puff lastry, scored a square in the top, baked it and had this filling in the middle mmmm served with jacket or roasties
I do the same with a curry base too using pataks curry paste and chopped toms veggies tin of chickpeas etc - rice & naan. Which is what we having tonight YUM:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.

Depends what I've got in, but here are two suggestions:-
Chop onion and a red or yellow pepper (not too finely!). Fry in a little oil until beginning to soften. Chuck in the chicken bits with a tin of value sweet n sour sauce and simmer gently about 7 mins until everyting is properly heated thru. Serve with boiled rice. It's nice.
Or if you've got time, some mushrooms or some leftover cooked vege such as leeks or carrots, you could make a pie. Mix meat and veges with some Campbells condensed soup (chicken, celery or mushroom are good) Pastry is nicest but I reckon you could you could make a mashed potato topping if you prefer.0 -
the other week i made a chicken supreme! much nicer than the school dinner one and very easy! basically pieces of chicken in a savoury white sauce served with rice, you could add a few mushrooms and a bit of chopped parsley on top brightens it up a bit! it went down very well!Member 1145 Sealed Pot Challenge No4

I am really new to this (and I must say I am enjoying myself planning meals etc. never thought I would say that!!) I can't believe how much money I have been throwing away - my wastage is terrible...
Anyway I have a nice big chicken for a roast today with pots and veg for me dh ds and twin babies - I usually end up having the leftovers for sandwiches the next day, but was wondering if anyone has an idea for a meal to feed 2 adults (plus if it is appealing enough a fussy ds of 5) if I use some of it for the girls thats a bonus..
I don't have anything in for pastry unfortunately (thats a bit beyond me yet!!)
also can I freeze the chicken once it is cooked - I bought the chicken fresh and have frozen it and now thawed it ready to cook this afternoon....
