Mm mum's chicken & grape salad is my favourite thing to do with left over roast chicken.
Mix the ripped up chicken with a dressing made from half mayo, half natural yoghurt (adjust to taste), I add chopped fresh tarragon into the dressing as well. chop seedless green grapes in half and add to the mix.
Its yummy with cold cooked brown basmati rice and I usually serve it with just cos lettuce and cucumber salad... So good!! (but might not appeal to fussy children).0 -

Why not make it into a shepherds pie style pie.
I normally fry an onion, a bit of celery, splash of wine, couple of spoons of stock, add the chicken, some frozen peas and sweetcorn and thicken with a bit of cornflour - top with mash and shove in the oven until golden."Start every day off with a smile and get it over with" - W. C. Field.0 -

2X Spicy Chicken/salad Wrap
4X Chicken Pickings Chicken risotto
2X Chicken Doner style Kebabs with Tzatziki
2X Chicken & Sweetcorn Sandwich
4X Calazone with Chicken Thigh
4X Chicken Curry + vegetable curry
Which isn't too bad

Thanks for some really good ideas - I can't believe how much you all get out of a chicken though! I will only get 2 meals out of mine (dh threw out the carcass last night by mistake :mad: ) Got all the meat off and it will be plenty for another meal for us all (in the past would have only got some sandwiches out of it for me so that is a bonus) and as the chicken cost only around £2.60 for a largeish one I don't think thats too bad..
I have to go to tesco today as I want to stock up on nappies and they are a third off so I don't want to miss out on that - am going to pick up some a passtry mix to do a pie - I don't have a pie tin though so does anyone have any ideas as to what I can use instead? Sorry can't help with the plate theory... but mum makes chicken and leek pie with puff pastry just as a pie top - I do this now too - I use a square lasagna type ceramic dish and then cheat and use ready rolled frozen puff pastry (it's rolled into big squares anyway)working on clearing the clutterDo I want the stuff or the space?0

Hi. I made a variation on a sandwich using pitta bread, mixed salad & chunks of cooked chicken. We picked the meat from three large drumsticks & two wings, layered with segments of tomato & salad including sweetcorn. There was enough to fill six large pitta that way.
I guess you could mix the chicken with mayo first, but my lot don't eat it!

I have just looked in the cupboard to see what else I could do, I have a jar of tomatoey sauce (uncle bens - I won it in a hamper) which is supposed to be done with chicken and served withc rice (or whateve you want I guess)
