What to do with leftover lamb?

    I have enough roast lamb for me and DH's dinner, but how should I do it that's different? The cut was a value knuckle or something that he bought and is on the bone, so I can strip it and make some stock with the bone in the SC.
    I have carrots and leeks in the garden and some new potatoes, also rice , tinned toms and that sort of thing.

    Hi there

    How about stripping the meat off, dropping it in a slowcooker with chunks of onions, carrots and any other veggies...add a drop of stock and when the veggies are cooked add some gravy granules and a good dollop of mintsauce...
    Then either have it as a casserole or make it into a pie???

    Thats if the meat is allready cooked...if not then drop the joint and veggies into the sc without any liquid and it will make its own(you can add a drop more if you like lots of gravy)...strip the meat off and then do as above

    I've just taken as much off the bone as poss and the lovely smell is making me starving and I'm thinking of a curry or goulash, but I'll need to nip out and get more ingredients for them.

    Just cooked roast lamb for sunday dinner. As usual there is plenty left over, any ideas what i can use the left over lamb to make?

    I dice mine and freeze it for curries and stirfries. You could cut it really fine and make a shepherds pie.

    Shepherd's pie is traditionally made with leftover lamb -use the food processor.

    Rissoles, meatballs, curry, reheat in gravy, pilaff, put chunks in batter for a toad-in-the-hole, sandwiches

    I either use mine for sarnies, a curry or I slice it and heat it in a frying pan with onions and gravy and have with mash and veg on a Monday night!
