    I slice my leftovers and freeze for a quick roast. Deforst pop some gravy on it a heat in the oven. We had leftover roast lamb from new year today. In fact the whole meal was leftovers frozen as we par boiled the spuds and freeze them too. par boiled frozen spuds make really crispy roast potatos. in fact we always but larger roast joints and then freeze enough for one meal. That way we can have a roast without all the long cooking process.

    Dice it and make a moussaka, mince for shepherd's pie, diced for a curry, or diced and fried with onions, peppers, mushrooms and tomatoes, serve with rice. I love having roast lamb just for the leftover meals that follow.

    I did roast lamb for Sunday lunch yesterday as my boyfriend was visiting. The trouble is that I've got rather a lot of meat left over and I'm only feeding myself during the week! Obviously I'll have a few slices in a sandwich, but what else can I do with it? Bear in mind that I'm only feeding one so making monster-sized pies or similar will still leave me with the same problem - i.e. eating the same meal all week!
  • Shepherd's Pies for the freezer?

    I freeze them in takeaway cartons which is about the right size for one person.
    Warning ..... I'm a peri-menopausal axe-wielding maniac ;)

    I'm quite happy to eat cold lamb and salads until the cows come home but my husband isn't, so he puts leftover slices in a small caserole, pours a little made-up gravy over it and reheats it, which works very well. Otherwise you can chop it up finely and stir in with chopped fried onions and mushrooms, a small tin of tomatoes and a couple of Oxosto make a lamb bolognese sauce which freezes well in individual portions in a plastic bags or containers. If you have a large amount of sauce you can add a little chilli powder and some red kidney beans to one portion and make a chili con carne, or even some curry paste or spices to make up a curry.
  • Last time I had leftover lamb I made a type of hash (chopped cooked potato, finely chopped lamb, fried onions). Alternatively there's a big thread here with lots of other ideas - leftover lamb.

    I'm making us a lamb curry today with our leftover lamb. I sort of made the recipe up a few weeks ago and it went down a storm.

    I put the leftover lamb (chunked), and onion, a pepper, 2 tins tomatoes, some Rogan Josh paste and a tin of green lentils (found them lurking in the cupboard :D ) into the slow cooker and cooked away for about 4 hours.

    The lamb was delicious and everyone lvoed it. You could always freeze what you don't eat, and I'm sure it would work just as well in a casserole dish on a low oven setting. HTH

    brown some onion
    Add gravy
    Heat through
    Add sliced meat
    Heat through
    Serve with mash and veggies
  • I made a pasta dish last week - shred the lamb and fry in olive oil with a finely sliced onion and some chopped garlic. Fry until the lamb is crispy and the onions are browned. Add a dash of soy sauce and stir through some cooked pasta with some crumbled cheese (i used anything left in the fridge). This was a big hit with the kids and dh and made a small amount of lamb feed 4.
