What to do with leftover lamb?

    The family (5 of us) love roast lamb but no-one really likes cold lamb and I haven't got a mincer so couldn't make shepherds pie with the leftovers like my mum used to so the un-used meat always used to sit there for about 4 days, then get thrown out :eek:

    However, since I have found this section of the forum ( and seriously needed to cut our exhorbitant food bills each month) I have been trying really hard not to waste food and am so proud of this weeks lamb roast recycling I just had to share it with someone :D

    So we all ate very well on Sunday (children eat adult portions as they are 16, 14, and 12), then I made a delicious lamb curry for Monday's tea, adding tomatoes onions, lentils and some rogan josh paste.

    I was left with a bone with a few bits of meat stuck to it and rather than throw it out I put it in my slow cooker with some celery, carrots and onions and water overnight on Monday. Taking out the bones I cooled then refrigerated the mix which meant that I was able to scoop all the fat off and left with a lovely jelly stock.

    I then soaked a pack of dried beans (casserole mix from Sainsburys) and cooked these then added a couple of spoonfuls to my stock and veggie mix with some potatoes, simmered until potatoes were cooked then whizzed it in my blender.

    I had some for lunch today and it was sooooo delicious. And to top it all I'm really full, have about 4 portions for freezing and reckon it cost about 50p to make. I am so proud of myself :T

    i dont like lamb in sandwiches per se, but finely diced and mixed with mayo and a bit of mint sauce is divine, especially on really fresh brown bread :drool:

  • Thats excellent! We love Lamb, although I dont like in sarnies either as it always seems to go chewy?....the stock/soup sounds delish and I doing something similar. You could always make extra lamb go further in:

    HM Pies
    Toad In Hole
    Shepherds Pie
    Curry

    great going - I love the taste of roast lamb but hate the smell of it cooking so I tend to stick to chicken but as I also love lamb rogan josh I might be tempted to give the "smelliness" a go!

    My OH threw away the juices from the roast lamb when he was washing up, meaning the recipe I was going to make I now can't do as it really doesn't work without them :(

    We don;t have much else in the house. There's an onion, some new potatoes, one baking potato, a pepper, two courgettes, herbs and spices, liquid stock concentrate, soy sauce, a tin of baked beans, rice, pasta, couscous, flour, eggs, butter, milk.

    Does anyone have a good recipe or a way I can use the lamb? It's for tonight so ideas needed by 8pm as that's when I need to start cooking.
