    Rissoles spring immediately to mind - you can use cooked rice instead of the breadcrumbs.

    lamb hot pot, sort of thing, use your veggie stock with your lamb and veggies and layer boiled, sliced potatoes on top, then pop in oven to brown the potatoes and cook everything through.

    I would make a lamb hash as apposed to a cornedbeef hash. Just substitute chopped lamb for the cornedbeef. chop and dice the potatos and onion, mix in the lamb fry till nice and crisp and serve with baked beans. I usually add a little garlic and worcester sauce to my hash.

    shepherd's pie - the soy sauce would add flavour to the gravy. If one baking potato doesn't make enough mash to cover the top try piping a lattice of mash on top. Then roast the pepper and courgettes and serve with cous cous to make up the starch shortfall
    It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

    Hi

    Fry off the onion, pepper and courgette. Add the baked beans and lamb plus and herbs & spices you fancy and make a lamb & bean stew. Serve with pasta or rice or couscous.
    If you've got any canned tomatoes they're nice either instead of or as well as the baked beans.

    I rather fancy the rissoles (just remembered I have some bread I can make breadcrumbs with) as I've never made anything like that before and I like a new recipe!

    Love all the other ideas too - I always struggle with using up leftover roast, other than chicken, but rissoles sound nice, like meatballs.

    The rissoles are made, the veg is roasting, and my OH is so impressed with me using the food processor ot make his dinner he actually came into the kitchen to kiss me! :D

    will report back once we've eaten but I'm hopeful these will be a new favourite.

    Well, I thought they were a little dry but Oh loved them.

    Next time i think I'll add a little oil to the mixture to make them a bit less dry - would that work?

    I wouldn't add more oil as it's likely just to make them greasy. I make rissoles with leftover lamb or beef a couple of times a month and just make extra gravy with the original roast and then reheat it to have with the rissoles. That way they're not too dry.
    For some reason I don't like the shap of Delia's rissoles so I flatten them and cook them in a cooking ring so they come out a bit like burgers and it feels more like a decent portion of meat iyswim. ;)
