What to do with leftover lamb?

Im doing lamb too and have already trawled the net. Im going to make the lamb pasties from this site with the left overs.

Shepherd's Pie. You can boil the extra potatoes and mash them on the Sunday. Then, on Monday, just mince/chop up the lamb and mix with the left-over gravy, Add any veg that you have left over (you can make extra on the Sunday).

My parents always used to make an english form of mousaka with leftover lamb.
Slice potatoes and steam. (My mum & dad used to fry them but not so healthy !")
Fry onions, garlic with lamb and add chopped tomatoes, dried mixed herbs and ketchup. You could also add peppers, courgettes etc if you want more veg in it.
Make a cheese sauce.
Line a pie dish with the potatoes, add the lamb mixture. Rest of the potatoes on top and finally cheese sauce on top. Bake in the oven until browned and bubbling.
Sorry, don't know quantities of anything it was always abit of a bung it dish but tasted great !!!
Or lamb egg fried rice ? Cook some rice and then let it go cold. Fry onions etc etc with lamb, garlic, chilli. Add the rice and when all hot add one or two beaten eggs. Serve with lots of soy sauce !!

will be cooking a big leg of lamb tom for easter sun so will have some left for mon. dont really like it cold so has anyone got any ideas for recipies that i cd use it in ? thankyou:rotfl:
