What to do with leftover lamb?

    I made a big leg of lamb yesterday and was amazed how much meat I got off it!
    We had roast dinner yesterday and gave generous portions, I have made a biryiani tonight and have a tub full in freezer to make a curry for another day.

    I don't normally buy lamb as it's so expensive but I do love it so think I will be making it a monthly treat now and see how much further I can stretch it! :j

    Help

    Just cooked a very large leg of lamb (it took aaaagggeees) and now have quite a lot of leftovers. Anybody got any good ideas for meals etc

    i like it in a pilau - with eastern spices (allspice, cumin, a cinnamon stick) - its nice with some nits and dried fruit in too - I mix it up for variety pinenuts and apricots, flaked almonds and sultanas, pistacios and figs - a handful of herbs at the end - mint, dill or coriander. its good with a little feta crumbled over too.

    Nice change from shepherds pies

    We made ours into Samosas for tea tonight with curry sauce and jacket potatoes - nom. We added all the leftover veg to them as well

    Burgers! Mix the meat with a little egg so it sticks together with some salt and pepper then squidge to burger shapes and shallow fry ...mmmmmmmmmm

    I've got some lamb left over from yesterday so instead of the usual lamb curry that I always make with leftovers I'm going to dice it and stick it in a dish with some gravy and top with mashed potato and do a shepherds pie. I've never made a proper shepherds pie using leftovers, I normally use mince so it will be a first.

    You won't regret it.... shepherd's pie with 'real lamb' is fabulous! My leftover lamb will be used up tomorrow. I don't have enough to make a full meal for all of us, but I'm making broccoli soup and we're having it with lamb, mint sauce and tiny smear of gravy sandwiches. Doesn't sound particularly apetizing, but they are the best sandwiches in the world! :D

    ooooooooooh nothing beats a nice bit of cold lamb and bubble/beans/chips.
    or just a yummy lamb sarny withmayo.
