    I'd make a Shepherd's Pie or a Lamb Tagine.

    I have lamb that should do two meals so I shall probably shred whats left, stir fry it with some veg and serve with noodles and soya sauce...kids love it!

    I have never had sheperds pie with 'proper' lamb, only minced!
  • I make lasagne from lamb mince, exactly as the moussaka recipe mentioned by a previous poster except I put in sheets of lasagne instead of potato, and instead of cheese sauce I use a tin of mushroom soup. Will def try it with potato now though.

    Shepherds pie is my favourite.

    Another favourite is mince n rice, I stir fry a load of veg - I usually use carrots, onions, mushrooms and peppers as thats what I usually have in the bottom of the fridge, but you can use anything. Add the lamb, add some stock, (I just use some made up gravy granules) and I bung in some soy sauce, a slug of tomato ketchup and a table spoon of mince sauce. Serve with rice.

    Make pies!! I always use my pie maker to make lamp pies with leftovers and it's so quick and easy and tastes brill ;)

    Lamb meatballs are my favourite. Add some breadcrumbs or couscous, a beaten egg some mint & (if you have it) sun dried tomatoes. Poach in a veg stock with lots of lemon juice in (use a big frying pan, make the stock come about halfway up the meatballs) and serve with a lemon/mint/yoghurt dressing.

    Sit in the sun & eat, pretending you are in Greece on your hols!

    It's not something I would really cook but if i did, it would be mince meat. I'm not sure if that's regional thing!

    Mince, like beef? If so then its cottage pie not shepherd's pie! ;) This is one of those silly little things that makes me, childishly I admit, point out that shepherds, after all, don't have cows but sheep!:o:o (I also make what I call ''small holder's pie....what ever meat we have and mostly veg, lol)

    Me either. Was always cottage pie as it was cheaper to use beef mince. Terribly deprived as a child ;)

    I like a pilau with spices (coriander seed, cinnamon stick, allspice is good...), onion, some fresh greens (beans, forzen peas, spinach) pinenuts or toasted seeds and fresh coriander stirred thru at the end - a little feta crumbled on the top is delicious too.

    I made a spiced shepards pie last week too - some cinnamon, cumin a little chilli, borlotti beans and topped with mash with sweet pot added to the spuddies. It was a huge hit evne to my bean hating oh and ds! Dd picked hers out grrr
