What to do with leftover lamb?

I am doing a roast leg of lamb tomorrow and in true money saving (old) style want to make something with the leftover lamb any suggestions? OH and me like most types of foods and have normal onion, tinned toms, herbs in cupboards.
Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts

A great favourite of ours is stovies.
Into a casserole put a layer of potatoes, followed by a layer of onions then a layer of lamb and continue like this until you have used up your lamb. Pour half a pint of stock over, or more dependant on how much you've made, and cook as a regular casserole. This is a delicious dish.

That's a different method to the stovies I make, although I believe there are regional variations depending which bit of Scotland you're in, but I make mine with sausage chunks and spuds, chopped into various sizes, and cooked in a beef stock with loads of ground pepper. The smaller chunks of potato soften and dissolve during cooking (2-3 hours in a stockpot) and thicken the gravy. It's a big favourite amongst my boys"An Ye Harm None, Do What Ye Will"

I did this once with a leftover bit of a leg of lamb:
tin of toms
an onion
garlic
stock cube
cup of green lentils
some water
bung it all in the slow cooker, sit back and enjoy:)Member no.1 of the 'I'm not in a clique' group :rotfl:
