What to do with leftover lamb?

You could mince it up and put with gravy and mashed spuds for shepherds pie
Or make lamb burgers
Or lamb curry
Or sliced with chips
Or mix it with veg and gravy to make a stew
Or sliced with some salad
Or made into kebabs
Or put in pitta bread with some salad
Can anyone add anything else?

How about rissoles. My mother always used to make them, and by repute, HM The Queen also enjoys them.
Example recipe in the link, but there almost as many recipes as for "stew".
Worth having a roast for, in my humble opinion!

Hmmm curry might be a plan, thanks! Have also found a recipe for 'shepherds pie hash' in my River Cottage Meat book (amazing book) - just cubing it up with onion, garlic, cubed cooked potato and some veg maybe and frying it up.
How would you go about getting it from cooked meat on the bone to mince? I've used my food processor before to make chicken meat into homemade chicken kievs/nuggets, but it makes it more into mush than mince, worked ok for the kievs but not sure about mince recipes?0 -
I've done a recipe before which I adapted from one thats supposed to have lamb chops. Its basically lamb with tomato rice and I just added the lamb chopped up into the rice near end of cooking time.
Gently fry 1 chopped onion with 1 celery stalk chopped up in a large pan. Stir in 14oz can chopped tomatoes add 1/2 pt water. Add 7oz long grain rice, 1tbsp chopped basil, salt and pepper to pan. Stir well cover and simmer 25 - 30 mins until rice is just tender and liquid nearly absorbed. Then throw in the cooked lamb pieces, stir and heat through. Serve sprinkled with fresh basil and warm crusty bread. I sometimes also add couple of finely chopped garlic cloves with the onion if I'm not mowwrying about being stinkyMortgage, we're getting there with the end in sight £6587 07/23, otherwise free of the debt thanks to MSE help!0 -
What I used to do when money was tight, and had lamb left over from a sunday dinner, is cut into small chunks, make some gravy, and put the lamb in the gravy, with mint sauce & peas, and simmer on the stove. Serve with mash pots and a giant yorkshire pud! Simple and easy to do!Hi, we’ve had to remove your signature. Make a pilaf with onions, rice , diced lamb-add raisons, pine nuts, chopped dried apricots, what ever you have in your cupboard.
Or a deep dish lamb pie with diced lamb, lamb gravy , sauted onions, a small tin of butter beans, a few mushrooms (cook first) and some cooked peas. Top with puff pastry.0 -

Thanks for all the inspiration everyone - OH has voted for Hugh Fearnley-Whittingstall's shepherds pie hash, but I'll definitely bear everything else in mind for future, roast lamb is a favourite of mine. That pilaf especially sounds gorgeous - sadly my OH isn't a fan of sweet things like sultanas and apricots in savoury dishes. It's a pain as I love moroccan cuisine but never get to cook any!0 -

I have a whole dinner plate full of lamb meat following a Sunday roast.
It is a Jamie Oliver 5 hour leg of lamb recipe, so the meat is very tender and in chunks as opposed to slices.
Does anyone have any ideas what I can do with the meat?
My husband is a no spice, no peppers, mushrooms man. So it limits my imagination!
