Had the resolution today from Ryanair that they are paying £1094 (250 euros per person) into our bank account within 10 days.
Not bad considering our flights for the 5 of us return, were just over £1200 with luggage & seat reservations as well.

Good morning everyone,
My flight was cancelled due to the lightning strike-refueling incident in Stansted on May 27th. We rebooked a flight the next day from a different Airport with a different Airline, because rebooking online via the link we received by ryanair didn't work (and when we finally received our suitcases and wanted to go to the ryanair desk, all flights for the next 2 days were gone).
We kept all the receipts for the flights, hotel, bus, meals etc and I sent them through the online form to ryanair. Unfortunately Ryanair answered that they would refund our original flights (138€ vs the 400+€ we ended up spending for everything) and that they we didn't qualify for a compensation. They completely ignored the receipts etc I sent.
The problem MIGHT be, that - since we booked our flights from Germany and on the German Ryanair homepage - I sent in my claim via the German page and thus wrote everything in German. Or maybe they did it on purpose.
I tried responding to their mail quoting the EU 261/2004 but that email adress doesn't work.
I there a way of writing to Ryanair?

After over 3 years of trying to get my claim and following Vaubans guide, I was made an offer. But they won't to pay me less than I asked for.. They are offering without the statutory interest and a conversion rate from the date of the delay which is a lot less than now and are threatening that if I don't accept they will fight back and charge me their expenses which they have already tried to say before.
I don't know if I should accept it or not? For all my effort, I don't want to end up with £70 less. Is it true that the interest doesn't apply because it's not a debt? And also shouldn't I get 250 euros now, rather than £190-something?0 -
You are only entitled to interest if you actually commence court proceedings and if you were to do so solely on the point of interest you would probably get no costs.0

You need to balance wins and losses here. Did you start court proceedings? Have they offered you a settlement on seeing your witness statement? That might give you a idea of whether they think they will win or lose in court. Presumably they have offered without admitting liability. Did you get them to concede confidentiality?
I ask, because, whilst it appears unfair (and I have no legal training at all), you need to weigh up whether it is worth going to court for interest and a better exchange rate. On those points, the court may well go against you even if you win settlement in full. If you are a litigant in person you need to think about whether you are able to argue this to the point you can persuade the judge. And, if it goes to court, you could lose. If you are a LiP it won’t be an easy road. I apologise if I seem negative, just think you perhaps should look at options. Could you negotiate a better exchange rate?0 -
Regulations state that compensation is in euros ask them to send you a cheque for 250 euro's x the amount of people claiming and have your bank convert it at today's exchange rate0
