It's best to send it by post and get proof of posting from a post office, you don't need to use special or recorded delivery. Did the 2 checks reveal you are due compensation?0

Yes I did the checks and it says we are eligible for the claim!. This is how the letter looks now...

Further to the letter of complaint, we have not received a satisfactory response to the compensation claim for flight TCX2019 on 16/06/2016.
The judgement of the Court of Justice of the European Union in Tui & others v CAA confirmed the applicability of compensation for delay as set out in the Sturgeon case. This
has been subsequently acknowledged by UK courts, including the Supreme Court recently. As such, we are seeking compensation under EC Regulation 261/2004 for this delayed flight. You neither settle the claim in full nor provide a full and satisfactory defence to the claim within 14 days of the date of this letter, I reserve the right to issue legal proceedings without giving you further notice in writing.

Sorry I seemed to use another site than EUclaims! Yes it does seem to say were not eligible? However we did not get off the plane for bang on 179 minutes as Thomas Cook claims?0

The time is measured by the time the aircraft doors are opened. Somebody on here will have access to that info and no doubt will give you the time0
