    Mexican Bake
    3 sweet potatoes, peeled and cut into small cubes
    1 large red onion, peeled and chopped
    1 red pepper, cubed
    1 tomato, cubed
    couple of handfuls of frozen sweetcorn
    tin of baked beans
    tin of sliced mushrooms, drained and washed
    oregano
    black pepper
    chili flakes
    135g grated mozzarella

    1. Boil the potatoes and drain when just ready.
    2. In some frylight, saute the onion then add the red pepper and tomato.
    3. Add the mushrooms and sweetcorn and mix well.
    4. Add a couple of teaspoons of oregano, a good shaking of chili flakes and a few grinds of black pepper.
    5. Add the baked beans and combine all together.
    6. Pour into a casserole and sprinkle the grated cheese on top.
    7. Bake in the oven until the cheese has melted and browned. (180º)

    Sorry for those who were disappointed this week, its so annoying when that happens, I was feeling trousers loose SUnday/Monday but now * has arrived and am looking bloated again and I need a poo :o (I can only do it on my own porcelain throne :rotfl:) Thank goodness I finish at 3 today :D

    B - Melon, pineapple, frozen berries, nat yoghure
    L - Dyno Rod Soup, Melon, pineapple, Alpen light
    D - Lemon Chicken & asparagus with fried rice, salad
    S - Banana
    B - 2 x alpen lights
    A - 30g cheese & pickles

    Just back in from the weight loss workshop and the scales there are showing a 1.2kilo loss so 2lb thereabouts so hoping for group scales to say the same this week, pain in the backside that i have to weigh again tomorrow for the actual weight loss supprt group at doctors to make sure it all tallies up so will be happy just seeing it all move.

    Workshop was less stimulating today but i think that was cos a new woman came in trying to steal the show, all about her and less about the weight loss as she doesn't believe in diets :cool: so going to have a read through the literature in a bit to see if there was anything of any use.

    Hi all..

    Back to work again.. Why do your days off fly by so fast!

    :j for losers.. :o for gainers and a :grouphug: for anyone that needs one..

    food today has been..
    B: allbran + banana (A+B)
    L: bacon, mushrooms, scrambled egg
    T: thai red fish curry (taste of asia book) 2 syns, had with boiled rice and added extra veggies to those in the recipe (pepper, courgette, pak choi, asparagus) very tasty indeed!

    dessert, strawberries, blueberries, yoghurt.. might go mad and crumble a meringue nest into it :D

    Ok so today didn't go quite according to plan, got back to work and there was a huge bag of marshmallows on the table, well it would have been rude not to have one or eight! :o Then came home from work, only had 15 mins in house before I had to go back out for a meeting at the school and was starving so out came the crisps! (french fries though so not all bad!)..was good at the meeting, as it's a healthy award school there is always a delicious fruit platter in the middle of the table, so I had a little munch on that :)...not long came home and did stick to my meal plan of Jacket Potato, cheese and spag bol however there was only a bit of cheese left after my hubby served my dinner so he just put it all on my plate, I of course objected very loudly ;) :rotfl::rotfl:
