    Pasta pesto - one of my current favourites and easily adaptable

    Cook pasta all dente. As the pasta is cooking - in a little bowl mix the following

    A tbsp or two of the pasta water, fresh chopped chilli (or flakes), salt, pepper, lime juice (i use from abottle - lemon would work too),and a quantity of pesto (syns but worth it). Once the pasta is cooked, drain well and mix with the coating sauce

    Good additions - i usually add chopped cherry tomatoes, caramelised onions and peppers, and cooked chicken or bacon.

    Delicious cold, and amazing reheated with cheese if you're a cheese fiend like me.:p

    God they are soooo easy, Hob version is to start sweating off the onion and any garlic you may use, throw in the arborio rice stir it all around, add stock bit by bit till it is all absorbed and depending on cooking time of any veggies used will depend on when you throw those in too. Cooks for approx 20-30 mins until the rice still has a small amount of bite to it.

    Sounds nice, do I get the Pesto from the supermarket premade? Is it in the fridge with other dips etc..

    Yep sounds like even I could cope with this, would need to go and get the special rice thoough, I presume it's easy to get from Asda?

    Have another veggie one here that you can adapt for more veggies to top it up to your 1/3rd sf and use a HEa

    Arborio rice is around £1 a bag in the rice isle. In mine it is usually on the top shelf.

    Just found this one (as I still have some quark in my fridge from yesterday) I really fancy this one (though I suppose I'll have to leave out the wine :( ) I might add a bit of chicken too and maybe some leeks. The philly smoked salmon one looks lush but hubby is not a fan of salmon so will have to have that for lunch one day :)

    I have made that mushroom one before and served with a side salad. My hubby likes it but kids find it too cheesey, not sure how it would taste with quark though.

    I think it might be less cheesy with quark, not sure though.


    Grrrrr men!!!!! :mad: just said to hubby about risotto tomorrow and he pulled a face! Said he would rather have a jacket spud and beans...again! I give up!!! Got those Maggi bags still to do as well but not enough time tomorrow :(
