    I do have a slow cooker, so going to make some veg stock overnight with all the uncooked veg bits leftover bits from my cassoulet, then will take it from there. MY slow cooker is red hot at the moment!
    I LIKE ALL FOOD, that's the problem, but minestrone would be my favourite.

    I love carrot, lentil and coriander soup, it was in the little booklet that came with the last slimming world magazine.

    200g red lentils
    450g carrots, peeled and chopped
    1 Large onion, chopped
    1 tsp ground coriander
    Salt and freshly ground black pepper
    A handful of fresh coriander, finely chopped.

    Put the lentils, carrots, onion, ground coriander and 1 litre cold water in a large pan. Bring to the boil for 10 minutes, uncovered then reduce the heat and simmer for 25 minutes. Then blitz with a liquidizer/hand blender, I completely blitz it until it is smooth but you could leave it chunky if you wish. I found it really thick so added some more water, I also added a veg stock cube for extra flavour and it was lovely.

    I have decided that I am not going to go to meetings anymore, I have been at target since just before Christmas and I am still the same weight so clearly I can be trusted :rotfl:. I am exercising a lot more now so I am paying more attention to my body fat percentage rather than my weight. I will still be eating the slimming world way and reading this thread religiously to stay on track though :)

  • Hi all, just popping in. Trying to stick more or less to plan (over Christmas and my birthday I gained 4 or 5 pounds, but am still under 10 and a half, with 10 st as my ideal weight, so no big probs really)

    Good news TIE, re Mr TIE. There has to be a first time for everyone to drive alone ... this is your son's time. He will be fine :D

    Re the brain tumour (sorry forgot to press the quote button) don't worry too much ahead of time, 2 friends of mine are alive and well, one 30 yrs later (he'd been suffering progressive "deafness" since teenage, turned out to be a tumour growing larger and larger, benign though in the cancer sense, but would have killed him if not discovered and removed), and one 5 years later having suffered migraines/severe headaches for years. So fingers crossed for your cousin.

    Banjo, the chocolate with chilli, is it dark chocolate? Don't deny yourself, have a piece and syn it. Or pop it into the freezer for a while, then suck on it to make it last longer :rotfl: but don't deny yourself! Alternatively, while your spouse is out of the room smear a bit of extra chilli onto all the chocolates, that should stop her noshing them all the time! We used to have a lady at class whose husband jeopardised all her efforts by drinking & encouraging her to join him. Having said that my two best neighbours, at my birthday, got me (1) a box of chocolates "they're just tiny chocolates though!" and (2) a big bag of fried chilli snacks. They just don't understand.

    I cook chicken with the skin on and pull it off afterwards (cats and birds eat the skin!) unless I am cooking thighs, I de-skin them first cos it's easy. I too live alone with a microwave, a small GF grill, a halogen & a slow cooker. I use them all, the microwave most though. NO STOVE. I got rid of that more than 20 yrs ago, not cost effective for one and it gives me more room in my kitchen.

  • They just don't understand.

    Ain't that the truth! OH went to buy bread on Friday and they didn't have any brown so he was going to get a white loaf that was low fat... he just didn't understand why I didn't want him to buy it!

    Yesterdays 'flexible' syns food diary:
    B - toast and philly
    L - pasta deli box (2) banana, mullerlight
    D - haggis, swede and potatoes (with whisky poured over :/) , homemade trifle, brie and oatcakes
    Syns - copious amounts of alcohol and cheesy chips/battered sausage on way home - whoops!
    Quite pleased that I managed to stay relatively on plan during the day knowing that the evening was going to be pretty alcoholic!

    Today:
    L - sausages (1), bacon, beans, waffles (5)
    D - roast of some sort, roast potatoes, carrots, peas, swede, gravy (2)
    snacks - mullerlight, banana, grapes, toast & philly (A&B)
    I do have a kitkat chunky coconut to try but I'll see if I can resist!

    Managed boot camp 3 times last week, and going to try for 3 times this week as well. I want my club 10 and 1.5stone award before I go on holiday!

    Yes it is dark choc with chilli. It's so difficult to just have one piece though when I have a taste.:o

    I still haven't got into the mind frame that I can still snack on free foods once I have had my evening meal. I'll get there.

    1. Spoon the yogurt into a mixing bowl and stir in sweetener to taste. Transfer the mixture to a large freezerproof container and place in the coldest part of your freezer. Allow to freeze for 1½ hours until the mixture is slushy. Beat well to break up the ice crystals.
    2. Meanwhile chop the cherries into small pieces, mix in the Kirsch, then cover and chill until required.
    3. Place the fromage frais in a bowl and add the vanilla essence, cherries and Kirsch and then fold into the ice cream mixture. Return to the freezer. Beat the mixture two or three more times at 30-40 minute intervals - this helps make a smoother, less icy ice cream. Then cover, seal and freeze until solid.
    4. Take the ice cream out of the freezer around 30 minutes before you want to serve it so it scoops easily. Sprinkle over a little grated chocolate (1½ Syns per level teaspoon), if using, before serving.
